Mediterranean Pasta Salad is one of the easiest pasta salads to make. Perfect for meal prep and make ahead friendly. This delicious salad is made with cucumbers, tomatoes, feta cheese and olives tossed in a homemade Greek Dressing, that comes together in no time.

During Summer I gravitate towards pasta salads pretty regularly. I like to make them early in the morning and let them sit in the refrigerator all day until dinner. This is especially helpful when the garden is in full swing, and I am busy harvesting and preserving all day. On those days, I know that I won't have the energy to cook a full meal after a long, hot day, but I still want to serve my family a healthy dinner.

Ingredients for Mediterranean Pasta Salad
- u003cstrongu003ePastau003c/strongu003e- I like to use rotini because the spirals hold onto the dressing really well. Any type of pasta (preferably short pastas) will work if you do not have rotini.
- u003cstrongu003eRed Onionu003c/strongu003e- Red onion has a nice kick to it and makes for a nice pop of color in the salad. If you prefer a milder onion flavor, use a sweet onion or omit the onion altogether.
- u003cstrongu003eKalamata Olivesu003c/strongu003e- Add a briny, salty flavor that is delicious in this pasta salad. Black olive can be substituted.
- u003cstrongu003eCucumberu003c/strongu003e- Any type will work. Depending on the thickness of the skin, peeling or partially peeling the cucumbers may be necessary. I like to use a thin-skinned cucumber that I grow in my garden called u0022Muncheru0022.
- u003cstrongu003eTomatoesu003c/strongu003e- Cherry tomatoes add a nice sweet and tart flavor to the pasta salad. If you do not have cherry tomatoes, you can dice a slicing tomato.
- u003cstrongu003eFeta Cheeseu003c/strongu003e- Probably one of the tastiest ingredients in the salad. The flavor really stands out and marries so well with all of the other ingredients.

How to Make Mediterranean Pasta Salad
Combine the cooked pasta, onions, olives, cucumbers, tomatoes and feta cheese in a large bowl.
In a small bowl whisk together the dressing ingredients.
Pour the dressing over the pasta salad, mix well to fully combine.
Serve immediately or refrigerate until ready to serve. Enjoy!
TIP
This pasta salad is best served after being chilled for several hours. It is still great if served immediately but gets much better after the flavors have had time to marry. If you have time, I highly recommend making it in advance.
How long is Mediterranean Pasta Salad good for?
Mediterranean Pasta Salad can be stored in the refrigerator for up to 5 days. Just before serving, give the pasta salad a good stir.

Mediterranean Pasta Salad
Ingredients
- 2 cup rotini pasta
- ½ Cup red onion small diced
- ½ Cup kalamata olives halved
- 1 Cup cucumbers quartered & sliced
- 1 Cup cherry tomatoes halved
- ½ Cup feta cheese
Greek Dressing
- ⅓ Cup olive oil or any neutral tasting oil
- 2 tablespoon red wine vinegar
- 1 ½ tablespoon fresh lemon juice
- 1 ½ teaspoon honey
- 1 clove garlic minced
- 2 teaspoon oregano fresh or dried
- ½ Teaspoon basil dried
- ½ Teaspoon dijon mustard
- ½ Teaspoon salt
- As Needed pepper
Instructions
- Cook the pasta according to the package directions. Strain in a colander. Run cold water over the pasta to stop the cooking.
- In a large bowl combine the pasta, onions, olives, cucumbers, tomatoes and feta cheese.
- In a small bowl combine all of the ingredients for the dressing. Whisk to combine.
- Pour the dressing over the pasta salad, stir to combine. For best results, refrigerate for several hours before serving. When ready to serve, stir well and enjoy.
