How To Make Lemon Herb Quinoa

This Lemon Herb Quinoa is an easy, fresh, and delicious side dish that pairs well with so many meals.

STEP 1

In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 30 seconds. Stir in the rinsed and drained quinoa, toasting it for 1-2 minutes.

STEP 2

Add in the water and salt, then bring the mixture to a boil. Cover, reduce the heat to low, and let it simmer for 15 minutes.

STEP 3

Once cooked, remove the pan from heat and let it sit, covered, for 10 minutes. This helps the quinoa absorb any remaining moisture.

STEP 4

Remove the lid, fluff the quinoa with a fork, and stir in the fresh herbs, lemon zest, and lemon juice. Enjoy!
