Tender, juicy, and full of flavor, these Oven Baked Pork Chops are a weeknight dinner win. The best part? The oven does most of the work, so you can get a homemade, from-scratch meal on the table without much fuss. If you're looking for a quick and easy pork chop recipe, this is it.

This is one of those go-to dinners I lean on when I need dinner quick but I still want something hearty and satisfying. While the chops bake, I can focus the sides. We love pairing them with my Green Beans and Potatoes recipe, it's a simple combo that always hits the spot.

Let me start by saying I don't really care for pork chops, HOWEVER, this recipe had amazing flavor! I actually had one for lunch the next day! I followed the recipe to a "T", the seasoning was perfect and the garlic and butter is what put it over the top!

How To Make Oven Baked Pork Chops

Making tender, juicy pork chops in the oven comes down to four simple steps:

  1. Use paper towels to thoroughly pat the pork chops dry on both sides. This removes excess moisture, so the chops roast evenly instead of steaming.
  1. Drizzle both sides of the dry pork chops with olive oil, then sprinkle the spice mixture generously over both sides.
  1. Evenly sprinkle minced garlic over each seasoned pork chop and place a piece of butter right on top of each chop.
Oven Baked Pork Chops
  1. Bake for 20 to 25 minutes until the internal temperature reaches 145°F. Rest for 10 minutes before serving so the juices redistribute throughout the meat. Enjoy!

Sky's Tips

  • Pat Dry for Better Roasting: Always pat your pork chops dry with paper towels before drizzling with olive oil and seasoning. Removing excess surface moisture ensures the spices stick and helps the meat roast evenly rather than steaming in the oven.
  • Don't Overcook: Pull your pork chops out of the oven as soon as an instant-read meat thermometer inserted into the thickest part reaches 145°F.
  • Let Them Rest: Give the pork chops a full 10 minutes to rest on the baking sheet before serving. This allows the juices to redistribute throughout the meat so every bite stays tender and juicy.
  • Bone-In vs. Boneless: We love 1-inch thick bone-in pork chops because the bone keeps the meat juicy during baking. If using boneless pork chops, start checking for doneness around 15 to 18 minutes.
  • For extra flavor and a golden crust, pan sear the pork chops in an oven safe skillet before baking. Add garlic and butter after searing, then transfer to the oven.
  • Spoon some of the pan drippings over the chops before serving for even more flavor.

Oven Baked Pork Chops

Easy oven baked pork chops with garlic, butter, and spices. A quick, homemade dinner recipe using bone-in pork chops baked to perfection.

Ingredients
  

  • 4 bone in pork chops about 1-inch thick
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ¼ teaspoon chipotle powder or cayenne pepper
  • 2 tablespoons butter cut into 4 pieces
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Preheat your oven to 400°F. Thoroughly pat the pork chops dry on both sides with paper towels. Mix together salt, pepper, garlic powder, onion powder, paprika, dried oregano, and chipotle powder in a small bowl.
  • Place the pork chops on a parchment-lined baking sheet or in a baking dish. Drizzle both sides with olive oil, then season generously with the spice mixture.
  • Evenly sprinkle the minced garlic over each pork chop. Top each one with a piece of butter.
  • Bake for 20-25 minutes or until the internal temperature reaches 145°F. Let the pork chops rest for 10 minutes before serving.

  • The bake time will vary depending on the thickness of your pork chops. This recipe works best with chops that are about 1 inch thick.

      Great question! For extra thick bone-in pork chops, you can keep the oven temperature the same. Just plan to add about 5 to 6 minutes of additional cook time, and start checking the internal temperature as it gets close. You’re looking for 145°F in the center. If needed, let them cook a few minutes longer until they reach that temperature. I hope you love them!

      I didn't have cayenne pepper or chipotle powder, so I used Cajun seasoning in place for the cayenne and chipotle. I made this with sour cream and chive mashed potatoes with California blend vegetables topped with a cheese sauce. And it was delicious. My husband even liked the way I did the pork chops.

      Nope, no foil needed! I find that baking them uncovered gives the best texture. Just be sure to use a meat thermometer to pull them out at 145°F so they stay perfectly tender!
