How To Make Dutch Oven Beef and Noodles
Making this beef and noodles from scratch is surprisingly simple. Everything cooks down in one pot to build a deep, flavorful broth before whipping up a quick gravy to pull it all together!

- Sear the Beef: Season the beef chunks with salt and pepper, then sear in batches in hot oil until browned on all sides. Remove and set aside.

- Sauté Aromatics: Reduce heat to medium, add the onions, and cook for 2 to 3 minutes before stirring in the garlic to cook until fragrant.

- Simmer Low & Slow: Pour in the beef stock while scraping up the browned bits, return the meat to the pot with the Worcestershire and bay leaves, then cover and simmer until pull-apart tender (about 3 hours).

- Shred Beef & Cook Noodles: Transfer the tender beef to a bowl and shred with two forks. Boil your egg noodles according to package directions, drain, and set aside.

- Make the Gravy: Melt butter in the pot, whisk in the flour to form a roux, then slowly pour in the reserved cooking broth. Simmer until thickened, then season to taste with salt and pepper.

- Don't Overcrowd the Pot: Sear your beef chunks in batches so they get a deep, dark crust instead of steaming. That browned outer layer creates the rich flavor base for your pan drippings!
- Scrape Up the Fond: When pouring in the beef stock after sautéing your onions and garlic, make sure to scrape up every bit of the browned bits (the fond) stuck to the bottom of your Dutch oven. That is liquid gold for your gravy.
- Skim Excess Fat: Depending on how marbled your chuck roast is, your reserved cooking liquid may have a layer of fat on top. Skim off a bit of the surface fat before measuring out your 4 cups of broth so your gravy isn't greasy.
- Season the Gravy to Taste: Because the liquid reduces down and concentrates as the beef simmers for 3 hours, hold off on final salting until the gravy comes together. Taste it right before adding the shredded meat back in and adjust to your liking!
Make Ahead, Storage, & Freezing
Make-Ahead: You can simmer the beef and shred it a day in advance! Keep the shredded beef and reserved broth in separate airtight containers in the fridge. When ready to serve, make your quick roux, whisk in the cold broth, stir in the meat, and serve over fresh cooked noodles.
Storage: Store leftovers (beef, gravy, and noodles combined or separate) in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a splash of extra beef broth if the noodles have absorbed the gravy.
Freezing: The cooked, shredded beef and gravy freeze exceptionally well for up to 3 months in a freezer-safe container or bag! Thaw overnight in the fridge and reheat on the stovetop. I recommend cooking a fresh batch of egg noodles when serving for the best texture.

Dutch Oven Beef and Noodles
Ingredients
For the Beef
- 2 to 2 ½ pounds beef chuck roast cut into 2-inch chunks
- 1 ½ teaspoon salt
- ½ teaspoon pepper
- 2 tablespoons olive oil
- 1 medium onion small diced
- 4 cloves garlic minced
- 5 cups beef stock or beef broth
- 2 bay leaves
- 1 tablespoon Worcestershire sauce
For the Gravy & Noodles
- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 4 cups reserved broth from the Dutch Oven
- salt and pepper to taste
- 12 ounces wide egg noodles cooked
Instructions
- Season & Sear Meat: Season the beef chunks evenly with 1 teaspoon salt and ½ teaspoon black pepper. Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat. Add the beef (working in batches if needed to avoid overcrowding) and sear until browned on all sides. Remove the beef and set aside on a plate.
- Sauté Aromatics: Reduce heat to medium. Add the diced onion and sauté for 2 to 3 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant.
- Simmer Low & Slow: Pour in the beef stock, scraping up any browned bits stuck to the bottom of the pot. Return the seared beef and any accumulated juices back to the pot. Stir in the bay leaves, Worcestershire sauce, and ½ teaspoon salt. Bring to a boil, then cover with a lid, lower heat to medium-low, and simmer for about 3 hours, or until the beef is pull-apart tender.
- Shred Meat & Reserve Broth: Remove the beef chunks with a slotted spoon to a large bowl and shred with two forks; discard the bay leaves. Pour the cooking broth from the Dutch oven into a large liquid measuring cup (you will need 4 cups total; top off with extra beef stock if needed).
- Make the Gravy: In the same Dutch oven over medium heat, melt the butter. Whisk in the flour and cook for 1 to 2 minutes to create a roux. Slowly whisk in the 4 cups of reserved cooking broth. Bring to a gentle simmer, whisking constantly, until thickened into a smooth gravy. Taste and season with additional salt and black pepper as needed.
- Combine & Serve: Fold the shredded beef back into the gravy until heated through. Serve spooned generously over hot, cooked wide egg noodles. Or mix the noodles right into the meat and gravy mixture! Enjoy!
