Preheat your oven to 400°F. Mix together salt, pepper, garlic powder, onion powder, paprika, dried oregano, and chipotle powder in a small bowl.
Place the pork chops on a parchment-lined baking sheet or in a baking dish. Drizzle both sides with olive oil, then season generously with the spice mixture.
Evenly sprinkle the minced garlic over each pork chop. Top each one with a piece of butter.
Bake for 20–25 minutes or until the internal temperature reaches 145°F. Let the pork chops rest for 10 minutes before serving.
Notes
The bake time will vary depending on the thickness of your pork chops. This recipe works best with chops that are about 1 inch thick.
For extra flavor and a golden crust, pan sear the pork chops in an oven safe skillet before baking. Add garlic and butter after searing, then transfer to the oven.
Spoon some of the pan drippings over the chops before serving for even more flavor.
