Juicy, perfectly seasoned pork tenderloin roasts alongside golden crispy potatoes for a delicious sheet pan dinner that's packed with flavor, all in just 55 minutes! This Pork Tenderloin and Potatoes recipe is one of my favorite weeknight meals to make. Minimal prep, easy cleanup, and maximum flavor, what's not to love about that?

I love using baby potatoes for this sheet pan dinner. Because they are small, they only need to be cut in half to roast evenly with the pork. If you only have larger potatoes, just be sure to cut them into 1-inch pieces so they cook evenly.

I've made this sheet pan pork tenderloin countless times, ans it never disappoints. It's one of those meals that feels fancy enough for a weekend dinner party but is easy enough for a last-minute weeknight meal. Everyone that tries this recipe has a hard time believing that it only takes 25-30 minutes to cook it! Plus, with everything cooking on one pan, cleanup is a breeze! That's a bonus in my book!

INGREDIENTS

  • Pork Tenderloin- It's lean, tender and quick cooking, making it the star of this dish. Be sure to trim any silver skin or fat off of the tenderloin before cooking it.
  • Potatoes- To ensure everything cooks evenly opt for baby potatoes cut in half or pieces that are no larger than 1-inch.
  • Olive Oil- Or any neutral tasting oil.
  • Garlic Cloves- Adds bold, aromatic flavor to the pork tenderloins.
  • Lemon- Needed for both the zest and juice to add a bright, citrusy kick.
  • Fresh Herbs- Both fresh thyme and parsley are needed.
  • Worcestershire Sauce- Adds a nice savory richness to the pork.
  • Seasonings/Spices- Both the potatoes and the pork tenderloin are seasoned with salt, black pepper, paprika and garlic powder.

How To Make Sheet pan Pork Tenderloin and Potatoes

This easy pork tenderloin and potatoes recipe comes together in just a few simple steps. With minimal prep and only one pan to clean, it's perfect for busy weeknights. Just season, and let the oven do the work.

STEP 1

Toss the baby potatoes with 1 tablespoon olive oil, ½ teaspoon of salt, pepper to taste, 1 teaspoon garlic powder, and ½ teaspoon paprika until evenly coated.

STEP 2

In a small bowl, mix together 2 tablespoons olive oil, 2 teaspoons salt, additional pepper to taste, 2 teaspoons paprika, minced garlic, lemon zest, fresh herbs, and Worcestershire sauce. Trim the pork tenderloin if needed, pat dry then rub the mixture all over them.

STEP 3

Place seasoned pork tenderloins in the center, ensuring they don't touch. Spread the seasoned potatoes around them.

STEP 4

Roast at 425°F for 25-30 minutes, or until the internal temperature of the pork reaches 145°F.

STEP 5

Remove the pork and let it rest on a cutting board for 10 minutes. If the potatoes need more time, place them back in the oven while the pork rests. After 10 minutes, slice and serve. For extra brightness, squeeze fresh lemon juice over the pork just before serving. Enjoy!

Tips

  • Use a meat thermometer- Pork tenderloin is best at 145° F, ensuring it's juicy and tender.
  • Cut potatoes no larger than 1-inch- This ensures they cook evenly with the pork.
  • Let the pork rest- Resting prevents juices from running out of the tenderloin when slicing.
  • Don't skip the lemon zest- It elevates the flavor and balances the richness of the pork.

Variations & SUBSTITUTIONs

Use rosemary or oregano (or all four herbs) for a different herb profile.

Ingredients
  

  • 24 ounces baby potatoes halved
  • 3 tablespoons olive oil
  • 2 ½ teaspoons salt

  • 2 ½ pounds pork tenderloins or 2 tenderloins
