Fried Potatoes and Onions, the ultimate comfort food side! They're crispy, flavorful and perfect any night of the week!

Growing up, whenever these hit the table, I knew we were in for a treat! It really doesn't get better than the combination of crispy fried potatoes and sautéed onions.

As a kid, I may have smothered mine in ketchup (don't judge me), but now I love them as they are, perfectly seasoned, soft on the inside, lightly crisped on the outside, and full of flavor from the onions. I love pairing them with smothered chicken or oven baked pork chops!

Your Fried Potatoes and Onions Guide

Let's talk about the best way to get perfectly crisp and flavorful fried potatoes! I've gathered a few tips over the years: some came from my mama and her mama, and the others I learned through trial and error.

This is how I make my fried potatoes with onions:

  • I cut them into ¼-inch thick slices. This size cooks evenly and doesn't take forever in the skillet.
  • Cook them in a large cast iron skillet, it really does make the difference on how evenly they cook. The skillet needs to be hot before you add the oil. Allow the oil to get hot before you add the potatoes.
  • Arrange the potatoes in an even later. Resist the urge to stir right away!
  • My grandma always left the potatoes to cook for several minutes, before stirring them the first time. I do the same. This allows them to cook, and brown on the bottom before you stir them the first time.
  • This step is optional but recommended for faster cooking. After the initial stir, cover with a lid and let them steam for about 8-10 minutes.
  • Wait to add the onions until the last 10-15 minutes of cooking to prevent burning them.

I wait to add the onions until the potatoes are tender but not fully cooked so the onions don't burn. By the time the onions are soft and lightly browned, the potatoes are perfectly golden and tender.

The biggest tip I can give you is to avoid stirring too often. Let them sit to brown, then stir gently. Over stirring will produce mushy potatoes!

Fried Potatoes and Onions

Golden, tender Fried Potatoes and Onions. A simple Southern side dish you'll want to make again and again!

Ingredients
  

  • 2 pounds russet potatoes peeled and cut ¼-inch thick slices
  • ¾ cup yellow or white onion large diced
  • 3 ounces oil any neutral tasting oil
  • ¾ - 1 teaspoon salt
  • pepper to taste
  • pinch chipotle powder or cayenne

Instructions
 

  • Heat a large skillet over medium heat. Once hot add in the oil.
  • Now add the potatoes in an even layer. Cook undisturbed for 5-6 minutes. Season with salt, pepper and chipotle powder. Try not to stir too often, or you will end up with mushy potatoes.
  • Stir gently, then lower to medium low heat and cover with a lid. Cook for another 5-6 minutes. Remove lid and stir. Place the lid back on and cook for another 5-6 minutes.
  • Check to see if the potatoes are tender, if they are tender you can keep the lid off. Stir in the onions and continue cooking, stirring occasionally, until the potatoes are fully cooked and the onions are lightly browned and tender. About 15 minutes.

Notes

Try not to stir too often, or you will end up with mushy potatoes.
