These No-Bake Christmas Peanut Butter Ritz Crackers are one my family's favorite no-bake treats. All that is needed to create these delightful Christmas "cookies" is buttery Ritz crackers, peanut butter, almond bark, and sprinkles. Although they are technically crackers, I like to call them "cookies", because they totally give me cookie vibes.

No-bake treat recipes are always valuable to have in your repertoire, particularly one as delightful as this. I have yet meet anyone who did not fall love with them after the first. I certainly did the first I tried them, and I am confident that you and your family will as well!
Besides being SO GOOD these cookies come together in just 1 hour. Yes, you read that right, 1 hour! If you are needing them super quick, skip the extra decorating and leave them plain. Trust me, they are great without sprinkles or the pretty Christmas trees piped on top.

- u003cstrongu003eAlmond Bark - u003c/strongu003eThis can be found in the baking aisle at your local grocery store. I whole package will be used.
- u003cstrongu003eSprinkles - u003c/strongu003eI found a few different Christmas sprinkles mixes, one with stars for the tree topper.
- u003cstrongu003eFood coloring -u003c/strongu003e Red and green food coloring if you decide to pipe the Christmas trees. Or you can buy colored candy melts. White chocolate can also be colored and used.

u003cstrongu003eHow To Make No Bake Christmas Peanut Butter Ritz Crackersu003c/strongu003e
- u003cstrongu003eAssemble Cookiesu003c/strongu003e - Lay out a single layer of Ritz crackers and top each cracker with 1 to 1 ½ tablespoons of peanut butter. Top with another cracker, pressing down gently so that the top cracker stays.
- u003cstrongu003eRefrigerate u003c/strongu003e- Place in the refrigerator to chill (this helps keep the crackers together for dipping) while you melt the almond bark.
- u003cstrongu003eMelt Almond Barku003c/strongu003e - Follow the directions on the package to ensure you do not burn the almond bark. Use a tall container to melt your almond bark in rather than a wide one. This helps make the dipping easier.
- u003cstrongu003eDip in Almond Barku003c/strongu003e - Using a fork, fully dip each u0022cookieu0022 in the almond bark. Let the excess drip off before placing on a parchment lined baking sheet. If using just sprinkles, add them as you go. The almond bark sets up pretty quickly.
- u003cstrongu003ePipe Treesu003c/strongu003e - Take the remaining almond bark, separate and color green and red. Place in a piping bag and cut a tiny hole. Pipe the tree on fully set cookies and decorate with sprinkles. Use the red to make bows or just a drizzle. Or us melted candy melts.
- u003cstrongu003eRestu003c/strongu003e - Rest 10 minutes on the counter or 6 minutes in the refrigerator. Enjoy!

Add crushed candy canes to the tops of the "cookies" after you dip them in almond bark.
Or top them with Andes Peppermint Crunch Baking Chips.
Want to replace the peanut butter? Fill the "cookies" with cooled ganache for a chocolatey treat!
Dip the "cookies" in chocolate almond bark.

These No Bake Christmas Peanut Butter Ritz Crackers will last about 1 week after making them. If you have any left, place them in an airtight container and store at room temperature. No need to refrigerate these little cookies.

No Bake Christmas Peanut Butter Ritz Crackers
Ingredients
- 48 ritz crackers
- As Needed creamy peanut butter
- 24 ounces almond bark
- As Needed sprinkles
- As Needed green and red food coloring
Instructions
- Line a large baking sheet with parchment paper and lay half of the ritz crackers out in a single layer.
- Spread about 1 to 1 ½ tablespoons of peanut butter on each cracker. Make sure to keep it off of the edges. Top with remaining crackers, pressing down gently to keep tops on.
- Place in the refrigerator while you melt the almond bark. This will help the "cookies" stay together better when dipping.
- In a tall (preferably glass) microwave safe container melts the almond bark by following the instructions on the package.
- Using a fork, fully dip each "cookie" in the almond bark. Let the excess drip off before placing on a parchment lined baking sheet. If using just sprinkles, add them as you go. The almond bark sets up pretty quickly.
