These No-Bake Christmas Peanut Butter Ritz Crackers are one my family's favorite no-bake treats. All that is needed to create these delightful Christmas "cookies" is buttery Ritz crackers, peanut butter, almond bark, and sprinkles. Although they are technically crackers, I like to call them "cookies", because they totally give me cookie vibes.

No-bake treat recipes are always valuable to have in your repertoire, particularly one as delightful as this. I have yet meet anyone who did not fall love with them after the first. I certainly did the first I tried them, and I am confident that you and your family will as well!
Besides being SO GOOD these cookies come together in just 1 hour. Yes, you read that right, 1 hour! If you are needing them super quick, skip the extra decorating and leave them plain. Trust me, they are great without sprinkles or the pretty Christmas trees piped on top.
Ingredients
You only need 3 ingredients to make these delicious No Bake Christmas Peanut Butter Ritz Crackers, 5 if you decide to pipe decorations and use sprinkles.
- Ritz Crackers-A salty, buttery base that adds the perfect crunch.
- Peanut Butter-Creamy works best for easy spreading, but crunchy adds a fun texture if you prefer it!
- Almond Bark-Found in the baking aisle—one full package is used to coat these sweet treats.
- Sprinkles-Use your favorite festive mix! I found a few fun Christmas blends, including one with tiny stars—perfect for tree toppers.
- Food Coloring-Red and green food coloring if you plan to pipe little trees or use pre-colored candy melts. White chocolate can also be tinted with food-safe coloring.
How To Make No Bake Christmas Peanut Butter Ritz Crackers
STEP1
Assemble Cookies
Lay out a single layer of Ritz crackers. Add 1 to 1½ tablespoons of peanut butter to each, then top with another cracker. Gently press to secure.
STEP2
Refrigerate
Chill the sandwiches in the refrigerator while you melt the almond bark. This helps them hold together when dipping.
STEP3
Melt Almond Bark
Follow package instructions to melt. Use a tall, narrow container—it makes dipping much easier and cleaner!
STEP4
Dip in Almond Bark
Use a fork to dip each cookie fully. Let excess drip off, then place on a parchment-lined baking sheet. If you're using only sprinkles, add them right away—almond bark sets quickly!
STEP5
Pipe Trees
Separate remaining almond bark and color with red and green food coloring. Transfer to piping bags, snip a tiny hole, and pipe trees, bows, or drizzle designs. Candy melts work great here too!
Variations
Add crushed candy canes to the tops of the "cookies" after you dip them in almond bark.
Or top them with Andes Peppermint Crunch Baking Chips.
Want to replace the peanut butter? Fill the "cookies" with cooled ganache for a chocolatey treat!
Dip the "cookies" in chocolate almond bark.
Storage Tip
These No Bake Christmas Peanut Butter Ritz Crackers will last about 1 week after making them. If you have any left, place them in an airtight container and store at room temperature. No need to refrigerate these little cookies.

No Bake Christmas Peanut Butter Ritz Crackers
Ingredients
- 48 ritz crackers
- As Needed creamy peanut butter
- 24 ounces almond bark
- As Needed sprinkles
- As Needed green and red food coloring
Instructions
- Line a large baking sheet with parchment paper and lay half of the ritz crackers out in a single layer.
- Spread about 1 to 1 ½ tablespoons of peanut butter on each cracker. Make sure to keep it off of the edges. Top with remaining crackers, pressing down gently to keep tops on.
- Place in the refrigerator while you melt the almond bark. This will help the "cookies" stay together better when dipping.
- In a tall (preferably glass) microwave safe container melts the almond bark by following the instructions on the package.
- Using a fork, fully dip each "cookie" in the almond bark. Let the excess drip off before placing on a parchment lined baking sheet. If using just sprinkles, add them as you go. The almond bark sets up pretty quickly.
- Take the remaining almond bark, separate and color green and red. Place in a piping bag and cut a tiny hole. Pipe the tree on fully set cookies and decorate with sprinkles. Use the red to make bows or just a drizzle.
- Rest 10 minutes on the counter or 6 minutes in the refrigerator. Enjoy!
