No Bake Christmas Peanut Butter Ritz Crackers

These No Bake Christmas Peanut Butter Ritz Crackers are one of my family's favorite no bake treats. Buttery Ritz crackers, creamy peanut butter, almond bark and sprinkles, is all you need to make these delicious Christmas "cookies".

Ingredients
  

  • 48 ritz crackers
  • As Needed creamy peanut butter
  • 24 ounces almond bark
  • As Needed sprinkles
  • As Needed green and red food coloring
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Line a large baking sheet with parchment paper and lay half of the ritz crackers out in a single layer.
  • Spread about 1 to 1 ½ tablespoons of peanut butter on each cracker.  Make sure to keep it off of the edges.  Top with remaining crackers, pressing down gently to keep tops on.  
  • Place in the refrigerator while you melt the almond bark.  This will help the "cookies" stay together better when dipping. 
  • In a tall (preferably glass) microwave safe container melts the almond bark by following the instructions on the package.
  • Using a fork, fully dip each "cookie" in the almond bark. Let the excess drip off before placing on a parchment lined baking sheet. If using just sprinkles, add them as you go. The almond bark sets up pretty quickly.
  • Take the remaining almond bark, separate and color green and red. Place in a piping bag and cut a tiny hole. Pipe the tree on fully set cookies and decorate with sprinkles. Use the red to make bows or just a drizzle.
  • Rest 10 minutes on the counter or 6 minutes in the refrigerator. Enjoy!

Notes

Red and green candy melts can be used instead of coloring the almond bark.  Or you can color a little white chocolate.
