Juicy, perfectly seasoned pork tenderloin roasts alongside golden crispy potatoes for a delicious sheet pan dinner that’s packed with flavor, all in just 55 minutes! This Pork Tenderloin and Potatoes recipe is one of my favorite weeknight meals to make. Minimal prep, easy cleanup, and maximum flavor, what’s not to love about that?
I love using baby potatoes for this sheet pan dinner. Because they are small, they only need to be cut in half to roast evenly with the pork. If you only have larger potatoes, just be sure to cut them into 1-inch pieces so they cook evenly.

Tips for the best Pork tenderloin and potatoes sheet pan dinner
- Use a meat thermometer– Pork tenderloin is best at 145° F, ensuring it’s juicy and tender.
- Cut potatoes no larger than 1-inch– This ensures they cook evenly with the pork.
- Let the pork rest– Resting prevents juices from running out of the tenderloin when slicing.
- Don’t skip the lemon zest– It elevates the flavor and balances the richness of the pork.
