Golden on the outside, tender and flaky on the inside. This Pan Seared Mahi Mahi is quick, flavorful, and made with just a handful of fresh ingredients. Garlic, butter, lemon, and dill are all you need to take this simple fish dish to the next level.

This is my favorite way to prepare mahi mahi. It’s simple, delicious, and perfect for any night of the week. I usually serve it with asparagus and roasted potatoes. Quick, easy, and so good!

🐠 Key Ingredients & Substitutions
- Mahi Mahi: You can use fresh or frozen mahi mahi. Just be sure to thaw completely and pat dry to get the best sear.
- Garlic: Fresh garlic really shines here. ½ teaspoon of Garlic powder can be substituted. Just add it to the fish when seasoning with the salt and pepper.
- Fresh Dill: It adds brightness and freshness. If you don’t have any on hand, fresh parsley makes a great substitute. Dried dill doesn’t have quite the same effect but can be used.
- Lemon: Fresh lemon juice is key!
💭 Tips
- Make sure your skillet is hot before adding the fish. If added too early the fish may stick to the pan.
- Don’t move the fish around in the pan too early. Let it sit and develop that golden brown color.

Pan Seared Mahi Mahi with Lemon and Dill
Ingredients
- 4 fillets mahi mahi
- 1 teaspoon salt
- To Taste pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 cloves garlic minced
- As Needed fresh dill chopped
- 1 lemon
Instructions
- Pat the mahi mahi fillets dry with paper towels and season both sides with salt and pepper.
- Heat a large skillet over medium-high heat. Drizzle in olive oil and let it get hot. Add butter to the skillet. Once melted, place the fish into the pan and sear, undisturbed, for 4 minutes.
- Flip the fish, add in the minced garlic, and sear the other side for another 3–4 minutes, basting with the butter and minced garlic as the fish cooks. The fish is done when it’s golden and flakes easily with a fork.
- Remove from heat. Drizzle with fresh lemon juice and garnish with fresh dill before serving. Enjoy!
