Pan Seared Mahi Mahi with Lemon and Dill

Ingredients
  

  • 4 fillets mahi mahi
  • 1 teaspoon salt
  • To Taste pepper
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 2 cloves garlic minced
  • As Needed fresh dill chopped
  • 1 lemon
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Pat the mahi mahi fillets dry with paper towels and season both sides with salt and pepper.
  • Heat a large skillet over medium-high heat. Drizzle in olive oil and let it get hot. Add butter to the skillet. Once melted, place the fish into the pan and sear, undisturbed, for 4 minutes.
  • Flip the fish, add in the minced garlic, and sear the other side for another 3–4 minutes, basting with the butter and minced garlic as the fish cooks. The fish is done when it’s golden and flakes easily with a fork.
  • Remove from heat. Drizzle with fresh lemon juice and garnish with fresh dill before serving. Enjoy!

Notes

  • Make sure your skillet is hot before adding the fish. If added too early the fish may stick to the pan.
  • Don’t move the fish around in the pan too early. Let it sit and develop that golden brown color.
