Grilled Chicken Caesar Salad Recipe
Ingredients
Chicken
- 2 chicken breasts boneless, skinless
- 2 tablespoons olive oil
- ½ teaspoon salt
- pepper to taste
- ¼ teaspoon garlic powder
Homemade Croutons
- 2 cups bread cut into ¾-inch cubes
- 2 tablespoons olive oil or melted butter
- ¼ teaspoon salt
- ½ teaspoon dried oregano
- ½ teaspoon garlic powder
Caesar Dressing
- ½ cup mayo
- 2 oil packed anchovy fillets
- 1 tablespoon water
- ⅛ teaspoon salt
- ¼ cup parmesan cheese shredded or grated
- 2 cloves garlic crushed
- ½ tablespoon lemon juice
- ½ teaspoon pepper
Salad
- 1-2 heads romaine lettuce rinsed and torn or cut into bite sized pieces
- ¼ cup parmesan cheese shredded
- cracked black pepper to taste
Instructions
Homemade Croutons
- Preheat your oven to 325°F and line a baking sheet with parchment paper. Spread the bread cubes out evenly. Drizzle with oil and season with salt, pepper, garlic powder, and oregano.Toss until everything's coated, then spread into a single layer. Bake for 25 to 30 minutes, stirring halfway through, until dry and toasty.
Grilled Chicken
- Pat the chicken dry and season both sides with salt, pepper, and garlic powder. Drizzle with oil and grill over medium heat until cooked through, flipping once. The internal temperature should reach 165°F. Set aside to rest while you prepare the other ingredients.
Homemade Caesar Dressing
- Add all dressing ingredients to a wide-mouth mason jar or a cup that fits an immersion blender (or use a standard blender). Blend until smooth and creamy, this takes less than a minute. For a thinner dressing, blend in a tablespoon or two of water until you reach your desired consistency.
Assembling the Salad
- Cut the grilled chicken into bite-sized pieces. Place chopped romaine lettuce in a large bowl, add some dressing, and toss gently to coat. Start with a small amount and add more as needed. Top with homemade croutons, grilled chicken, freshly shredded Parmesan, and a little cracked black pepper. Enjoy!
Notes
- To Bake: Preheat oven to 375°F. Place seasoned chicken on a parchment-lined baking sheet. Drizzle with olive oil and bake for 20-25 minutes, or until the internal temperature reaches 165°F.
- To Pan Sear: Heat a skillet over medium heat. Drizzle in the oil then add the seasoned chicken and cook 5-7 minutes per side, until golden and cooked through to 165°F. Let rest before slicing.
