Grilled Chicken Caesar Salad Recipe

Jump to Recipe Print Recipe

An easy, flavorful and fresh Grilled Chicken Caesar Salad. Made with crisp romaine, savory grilled chicken, crunchy homemade croutons, and a creamy Caesar dressing that ties it all together. Whether you're serving it up for lunch or dinner, this is one salad that never gets old.

This Chicken Caesar Salad is my go-to when I want something light but filling. The grilled chicken is a nice touch but can be simply pan seared or baked. I skip the marinating here and just season the chicken with a few simple spices and grill it up for a nice, charred flavor. It's juicy, flavorful and so easy to make.

My Latest Videos

I've paired it with my favorite homemade Caesar Dressing that literally takes 5 minutes to make. And of course, Homemade Croutons because they are a must for a good Grilled Chicken Caesar Salad.

I'm always throwing together a quick Caesar salad as a side with grilled steak or this 30-minute lemon chicken dish. Partly because they're just so good, but also because I'm constantly craving them! I usually have leftover dressing, so I'll grill a few chicken breasts for easy lunches throughout the week, it's the perfect way to use it up before it goes bad.

As an expert recipe developer, I take great pride in transforming classic dishes into approachable, from-scratch recipes anyone can make. This Caesar Salad and my Italian Salad are both great examples of homemade favorites that are simple, fresh, and full of flavor.

This Grilled Chicken Caesar Salad is simple, flavorful, and easy to make at home. With fresh ingredients and a homemade touch, it's a meal you'll want to make on repeat. Let me know if you try it, I'd love to hear your thoughts on this from scratch favorite!

Ingredients

Chicken

  • 2 chicken breasts boneless, skinless
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • pepper to taste
  • ¼ teaspoon garlic powder

Homemade Croutons

  • 2 cups bread cut into ¾-inch cubes
  • 2 tablespoons olive oil or melted butter
  • ¼ teaspoon salt
  • ½ teaspoon dried oregano
  • ½ teaspoon garlic powder

Caesar Dressing

  • ½ cup mayo
  • 2 oil packed anchovy fillets
  • 1 tablespoon water
  • ⅛ teaspoon salt
  • ¼ cup parmesan cheese shredded or grated
  • 2 cloves garlic crushed
  • ½ tablespoon lemon juice
  • ½ teaspoon pepper

Salad

  • 1-2 heads romaine lettuce rinsed and torn or cut into bite sized pieces
  • ¼ cup parmesan cheese shredded
  • cracked black pepper to taste

Instructions

Homemade Croutons

  • Preheat your oven to 325°F and line a baking sheet with parchment paper. Spread the bread cubes out evenly. Drizzle with oil and season with salt, pepper, garlic powder, and oregano.Toss until everything's coated, then spread into a single layer. Bake for 25 to 30 minutes, stirring halfway through, until dry and toasty.

Grilled Chicken

  • Pat the chicken dry and season both sides with salt, pepper, and garlic powder. Drizzle with oil and grill over medium heat until cooked through, flipping once. The internal temperature should reach 165°F. Set aside to rest while you prepare the other ingredients.

Homemade Caesar Dressing

  • Add all dressing ingredients to a wide-mouth mason jar or a cup that fits an immersion blender (or use a standard blender). Blend until smooth and creamy, this takes less than a minute. For a thinner dressing, blend in a tablespoon or two of water until you reach your desired consistency.

Assembling the Salad

  • Cut the grilled chicken into bite-sized pieces. Place chopped romaine lettuce in a large bowl, add some dressing, and toss gently to coat. Start with a small amount and add more as needed. Top with homemade croutons, grilled chicken, freshly shredded Parmesan, and a little cracked black pepper. Enjoy!

Notes

Other ways to cook the chicken:
  • To Bake: Preheat oven to 375°F. Place seasoned chicken on a parchment-lined baking sheet. Drizzle with olive oil and bake for 20-25 minutes, or until the internal temperature reaches 165°F.
  • To Pan Sear: Heat a skillet over medium heat. Drizzle in the oil then add the seasoned chicken and cook 5-7 minutes per side, until golden and cooked through to 165°F. Let rest before slicing.
For meal prep:
Store everything in separate containers in the refrigerator and assemble just before serving for the freshest flavor and texture.
