Tacos have always been one of my favorite comfort foods, and this recipe for taco bowls has been my go-to for a fast meal prep friendly lunch or dinner. I love how simple they are to throw together. With so many toppings, everyone can make their own bowl just like they like it.

Key Ingredients & Substitutions
- Ground Beef - I like using 80/20 for flavor. Ground pork and ground turkey are great substitutions.
- Black Beans - Freshly cooked or canned black beans. If cooking from dry, use ½-3/4 cup measured dry.
- Rice - Plain white rice is my go-to, but brown rice can be substituted.
- Seasonings - I use a homemade taco seasoning blend (in the recipe card below). Use your favorite seasoning mix if desired.
- Toppings - The best part! And totally up to you. I mention a few suggestions below.
An Easy Weeknight Taco Bowl Recipe
I make some sort of taco creation at least once a week. Yes, I really do! This recipe has been one I have been making a lot here lately.
When it comes to these taco bowls, I like to focus on the toppings (they're my favorite part!). Everyone gets to customize their own, which makes dinner easy and fun. We usually serve ours with:
- Pico de Gallo
- Diced Avocado (Guacamole is a great option too!)
- Cheese - cheddar, pepperjack or queso fresco are all delicious choices.

Ground Beef Taco Bowl Recipe
Ingredients
- 1 cup white rice cooked following package directions
Seasoned Ground Beef
- 1 ½ pounds ground beef 80/20
- 1 tablespoon ground cumin
- 1 teaspoon chili powder
- 2 teaspoons paprika
- 1 tablespoon garlic powder
- ¼ teaspoon chipotle powder
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ cup water
Black Beans
- 1 15 ounce can black beans drained & rinsed
- salt to taste
- ¼ teaspoon garlic powder
- 1 splash lime juice
Garlic Sauce
- ¾ cup sour cream
- 2 tablespoons mayo
- ½ cup cilantro, minced measured before mincing
- 1 ½ tablespoons fresh lime juice
- 1 clove garlic minced
Toppings
- shredded cheese (cheddar, pepperjack, or queso fresco) as needed
- pico de gallo as needed
- avocado, diced as needed
Instructions
Seasoned Ground Beef
- In a large skillet over medium-high heat, cook the ground beef until browned and cooked through, crumbling it as it cooks.
- Once done, drain off the grease and return the beef to low heat. Stir in all of the seasonings and the water. Mix until fully combined and heated through.
Black Beans
- Add the drained and rinsed beans to a small pot over medium-low heat. Stir in the salt (to taste), garlic powder, and lime juice. Cook until warmed through.
Garlic Sauce
- In a small bowl, combine all of the sauce ingredients and mix well.
Assemble the bowls
- Add some rice, beans and meat to a bowl. Top with your favorite toppings, then drizzle with the garlic sauce. Enjoy!
