Who doesn't adore a delicious double chocolate cookie? Especially when it's embellished with a generous amount of sprinkles! Sprinkles have a way of awakening the inner child in everyone, don't they? Or is that just me? I love decorating baked treats with playful sprinkles, like these Halloween Cupcakes and these Halloween Sugar Cookie Bars.
The best part about this simple Halloween cookie recipe is its quick preparation and the ease of decoration. Making these cookies with my children is also a delight; they particularly enjoy placing the googly eyeballs on the cookies before baking.

These cookies can be made in just 35 minutes, and they don't require any refrigeration. If you're like me, the absence of the need to chill the dough is a delight—it means you can enjoy the cookies even sooner!
STEP 1
Combine the dry ingredients in a bowl and whisk to combine.
STEP 2
In a mixing bowl, combine the butter and both sugars. Beat to combine, about 2 minutes, then add in the egg yolks, one at a time. Beat in the vanilla extract until fully combined and fluffy.
STEP 3
Add the flour mixture to the butter mixture and mix just until combined.
STEP 4
Fold in the chocolate chips and sprinkles, reserving some of the sprinkles and the eyeball sprinkles for the tops of the cookies.

STEP 5
Scoop out onto a prepared baking sheet, using a 1-ounce cookie scoop or two heaping tablespoons. Press the tops of the cookies into the remaining sprinkles and add a few googly eyeball sprinkles to the cookies.
STEP 6
Bake for 20 minutes or until the edges of the cookies are set. Remove from the oven, rest 1 minute then transfer to a cooling rack. Enjoy!

Cookie Tip
Some of the googly eyeball sprinkles may melt when in the oven. If this happens, just place new ones over the melted ones as soon as the cookies come out of the oven.

How do I make my cookies chewy instead of crunchy?
Using more brown sugar than granulated sugar helps to add to the chewiness of cookies. Also, using just the egg yolks and not the whole egg will also add to the chewiness of the cookies.
How long do I cream the butter and sugar in a cookie recipe?
The butter and sugar should be creamed together until the mixture becomes fluffy and lighter in color. This usually takes about 2 minutes on medium speed in a stand mixer.
How do I know when chocolate cookies are fully baked?
The cookies are done when they are puffy in the middles and set around the edges.
