Apple Pie Overnight Oats

Notes of lovely cinnamon, ginger and sweet, slightly tart, apple make up this delightful recipe of Apple Pie Overnight Oats. You read that right, Apple Pie!

I am always dreaming up new flavors for overnight oats. We eat overnight oats weekly at my house. So, getting creative with flavors is something we are always doing. Apple Pie came to me out of the necessity. I needed to use up some apples before they went bad.

These oats definitely do not disappoint. I start the recipe out by cooking the apples in spices that you would typically find in apple pie. Instead of tons of sugar I use honey. I could eat the filling by itself, it's delicious!

How To Make Apple Pie Overnight Oats

Any type of apple will work. Lately I have really been enjoying Pink Lady apples so that is what I used for this recipe. The Pink Lady offers just a touch of tartness that goes really well in this recipe.

  • Peel and dice the apple; a small dice works really well here.
  • Melt some butter in a small sauté pan then add the apples. Lightly season the apples with cinnamon, ginger, cloves and nutmeg. Add honey and continue to cook over low heat just until the apples are tender. About 5 minutes. You do not want to overcook the apples; they will become mushy. You want the apple to still have some texture to them.
  • Next, combine all of the ingredients in a medium container with a lid. Stir well and refrigerate overnight. In the morning top with granola, nuts or enjoy without any additional toppings.

Apple Pie Overnight Oats

Beautifully spiced Apple Pie filling mixed into a traditional overnight oats recipe. This Apple Pie Overnight Oats recipe is a new favorite of mine.

Ingredients
  

Apple Pie Topping

  • 1 large apple peeled, cored and small diced
  • 1 tablespoon butter
  • ½ teaspoon cinnamon
  • 1 dash clove
  • 1 dash ginger
  • 1 dash nutmeg
  • 2 teaspoons honey

Apple Pie Overnight Oats

  • ½ cup Old Fashioned oats
  • ½ cup yogurt
  • ½ cup almond milk or any liquid
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla exctract
  • ½ teaspoon cinnamon
  • 2 ½ teaspoons honey

Instructions
 

  • In a small pan over medium low heat, melt the butter.  Add in the apples and toss to coat in the butter. 
  • Next, add in the spices, stir well to combine.  Now add in the honey.  Stir well to incorporate the honey. 
  • Sauté until tender, approximately 5 minutes.  Remove from the heat and set aside.
  • Add all of the ingredients to a medium container with a lid. Stir well and refrigerate overnight.  Top with granola, nuts or enjoy without any additional toppings.

You can keep Overnight Oats in the refrigerator for about 4 days. 

Do Overnight Oats have to be made the night before?

Yes, and no. You have to give the oats time to soak up the moisture from the milk and yogurt to soften them. That is why they are typically made the night before so that they are ready for breakfast in the morning. You can make them in the morning and check on the texture of the oats after about 6 hours.
