We love overnight oats at my house and these peach overnight oats are one of our favorites to make. I love using fresh fruit in my overnight oats, and the homemade granola is a fantastic addition. You will never believe how easy it is to make a simple small batch of granola.

This peach overnight oats recipe consists of two components: the overnight oats and a small batch of granola.
FOR THE GRANOLA
This small batch of granola is also great for a quick snack or topping other flavors of overnight oats.

FOR THE PEACH OVERNIGHT OATS

- u003cstrongu003eYogurtu003c/strongu003e - Plain u003cstrongu003eGreek yogurtu003c/strongu003e is my go-to when making overnight oats. Vanilla flavored yogurt is also a great choice.
- u003cstrongu003eMilku003c/strongu003e - Any kind of u003cstrongu003emilk u003c/strongu003ewill work. I have used whole milk, 2% milk, almond and coconut milk successfully when making overnight oats. The milk can even be replaced with water if needed.
- u003cstrongu003eChia Seedsu003c/strongu003e - Chia seeds are an excellent choice for a nutritional boost and added texture. They help thicken overnight oats, providing a delightful texture. While they are optional, adding them is highly recommended.
- u003cstrongu003eMaple Syrupu003c/strongu003e - To add flavor and to sweeten the overnight oats. Honey or your favorite sweetener can be substituted if needed.
- u003cstrongu003eCinnamonu003c/strongu003e - u003cstrongu003eGround cinnamon u003c/strongu003eadds flavor to the overnight oats.
- u003cstrongu003eVanillau003c/strongu003e - Pure u003cstrongu003evanilla extractu003c/strongu003e for additional flavor. If using vanilla yogurt you can omit the vanilla extract.
- u003cstrongu003ePeaches u003c/strongu003e- Freshly diced peaches with or without the skin.

FOR THE GRANOLA
Mix together all of the granola ingredients and bake for 15-18 minutes. Cool before using.
FOR THE PEACH OVERNIGHT OATS
STEP 1
In a small bowl combine the oats, yogurt, milk, chia seeds, cinnamon, maple syrup, and vanilla extract. Stir until fully combined. Cover and place in the refrigerator overnight.
STEP 2
To serve the overnight oats mix in or top the overnight oats with the diced fresh peaches. Sprinkle over the homemade granola. Enjoy!
Overnight Oats are best eaten 1-3 after they have been made. Since the oats will continue to soften as they sit, the texture changes. While the optimal texture is within 1-3 days of making them, they remain safe to consume up to day 5. I eat them on day 5 all of the time and they are still great!
Old fashioned rolled oats are the best choice for making overnight oats. In my opinion, the best texture comes from using overnight oats. Instant oats become almost mushy and steel cut oats are too firm.

Peach Overnight Oats
Ingredients
- 1 ½ tablespoons maple syrup
- ½ teaspoon vanilla extract
- ¼ teaspoon cinnamon
- 1 pinch salt
- ½ cup old fashioned rolled oats
- 2 tablespoons chopped pecans
For the Overnight Oats
- ½ cup old fashioned rolled oats
- ½ cup yogurt
- ½ cup milk
- 2 tablespoons chia seeds
- 2 tablespoons maple syrup
- ¼ teaspoon cinnamon
- ½ teaspoon vanilla extract
- As Needed fresh peaches, diced ¼-1/2 cup
Instructions
- Preheat an oven to 325°F and line a baking sheet with parchment paper.
- Mix all the granola ingredients in a small bowl until they are thoroughly combined.
- Spread the granola mixture into an even layer on the prepared baking sheet. Place it in the oven and bake for 15 minutes. Then flip and bake for an additional 3-5 minutes until the mixture is crunchy and dry. Let cool completely then store in an airtight container.
For the Overnight Oats
- In small bowl combine the oats, yogurt, milk, chia seeds, maple syrup and vanilla extract. Mix until fully combined. Cover and refrigerate overnight.
- In the morning, add the diced peaches and granola to your overnight oats and enjoy!
