These Peach Overnight Oats taste just like a freshly baked peach crisp. Made with ripe peaches, a hint of cinnamon, and topped with a simple homemade granola, this recipe becomes a favorite during peach season.

We love overnight oats at my house and these peach overnight oats are one of our favorites to make. I love using fresh fruit in my overnight oats, and the homemade granola is a fantastic addition. You will never believe how easy it is to make a simple small batch of granola.

If you, like me, eagerly await peach season each year, consider exploring some of my favorite peach recipes. Peach Crumble Bars are incredibly tasty and very simple to prepare. Peach Hand Pies are also an excellent option for transforming your fresh, ripe peaches into a delightful treat that's sure to be a hit with everyone.

Key Ingredients & Substitutions

This peach overnight oats recipe consists of two components: the overnight oats and a small batch of granola. The small batch of granola in this recipe is also great for a quick snack or topping other flavors of overnight oats.

  • Oats - Old-fashioned rolled oats work best for both granola and overnight oats. They provide the perfect texture and hold up well in both recipes.
  • Milk - Any kind of milk will work. I have used whole milk, 2% milk, almond, and coconut milk successfully. Water can also be used if needed.
  • Yogurt - Plain Greek yogurt is my go-to for overnight oats, but vanilla-flavored yogurt is also a great choice.
  • Chia Seeds - Help thicken overnight oats and add a nutritional boost. While optional, they are highly recommended.
  • Maple Syrup - Adds natural sweetness and flavor to both granola and overnight oats. Honey can be used as a substitute if necessary.
  • Peaches - Freshly diced peaches can be used with or without the skin in overnight oats.

How To Make Peach Overnight Oats

FOR THE GRANOLA

Mix together all of the granola ingredients and bake for 15-18 minutes. Cool before using.

FOR THE PEACH OVERNIGHT OATS

STEP 1

In a small bowl combine the oats, yogurt, milk, chia seeds, cinnamon, maple syrup, and vanilla extract. Stir until fully combined. Cover and place in the refrigerator overnight.

STEP 2

To serve the overnight oats mix in or top the overnight oats with the diced fresh peaches. Sprinkle over the homemade granola. Enjoy!

How long do Overnight Oats last?

Overnight Oats are best eaten 1-3 after they have been made. Since the oats will continue to soften as they sit, the texture changes. While the optimal texture is within 1-3 days of making them, they remain safe to consume up to day 5. I eat them on day 5 all of the time and they are still great!

What are the best oats for Overnight Oats?

Old fashioned rolled oats are the best choice for making overnight oats. In my opinion, the best texture comes from using overnight oats. Instant oats become almost mushy and steel cut oats are too firm.

Peach Overnight Oats

Ingredients
  

  • 1 ½ tablespoons maple syrup
  • ½ teaspoon vanilla extract
  • ¼ teaspoon cinnamon
  • 1 pinch salt
  • ½ cup old fashioned rolled oats
  • 2 tablespoons chopped pecans

For the Overnight Oats

  • ½ cup old fashioned rolled oats
  • ½ cup yogurt
  • ½ cup milk
  • 2 tablespoons chia seeds
  • 2 tablespoons maple syrup
  • ¼ teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • As Needed fresh peaches, diced ¼-1/2 cup

Instructions
 

  • Preheat an oven to 325°F and line a baking sheet with parchment paper.
  • Mix all the granola ingredients in a small bowl until they are thoroughly combined.
  • Spread the granola mixture into an even layer on the prepared baking sheet. Place it in the oven and bake for 15 minutes. Then flip and bake for an additional 3-5 minutes until the mixture is crunchy and dry.  Let cool completely then store in an airtight container.

For the Overnight Oats

  • In small bowl combine the oats, yogurt, milk, chia seeds, maple syrup and vanilla extract.  Mix until fully combined.  Cover and refrigerate overnight.
  • In the morning, add the diced peaches and granola to your overnight oats and enjoy!

Notes

This recipe can be made with plain or Greek yogurt.  
This recipe works well with unflavored yogurt, vanilla yogurt or even peach flavored yogurt.
The small batch granola recipe can be substituted for store bought granola if needed.
The small batch granola recipe makes enough for two servings.
