Sweet Potato Hash

This recipe is probably one that I fall back on for a quick lunch more than any other recipe. Sweet Potato Hash is an excellent quick and nutritious lunch that uses very few ingredients and tastes delicious. It can be made for dinner too. In this recipe I use ground breakfast sausage, peppers, onions and eggs. Hash really is a great skillet meal that comes together quickly.

I like to use sweet potatoes for a quick lunch because they cook faster than other potatoes. I usually don’t have a lot of time to make lunch since I am currently cooking lunch around my one-year old’s nap time. This quick recipe cooks in about 30 minutes, if you cut your potatoes up small. Which is what I do when I am trying to get lunch done super-fast.

This sweet potato hash recipe is a great recipe to make ahead for lunches throughout the week. It also makes great leftovers that everyone will love. Just cook the eggs when you go to serve the hash.

Tips:

  • Make this recipe in a cast iron skillet. Cast iron skillets are great at retaining heat and even cooking.
  • Keep the potato pieces equal to promote even cooking
  • Remove the onion and peppers from the pan after sautéing to prevent burning while the potatoes cook.

Potato Hash recipes are very versatile. For this recipe I kept it simple with just a few ingredients. However, you can add so many different ingredients to hash. I like to throw in fresh spinach when I have it in the garden. It is also great served with a slice of fresh Sourdough Bread.

Sweet Potato Hash Ingredients

  • Sweet Potatoes– They are packed full of nutrition and make up the bulk of this recipe.
  • Breakfast Sausage– I used breakfast sausage for this recipe, but you can use bacon if you like. Using sausage helps to bulk up the hash and also helps to stretch it further. Plus, flavor, of course. Or you can skip the meat all together. The hash will still turn out great.
  • Onions and peppers– I put onions and bell peppers in every hash dish that I make. The flavor of the peppers, onions and potatoes mixed with a runny egg is phenomenal. Any color bell pepper or a mix is fine. Other sweet peppers can be used. Or even spicy peppers.
  • Eggs– Is it even a hash without eggs? A nice runny egg acts like a sauce that coats the hash and makes it SCRUMPTIOUS.
  • Seasonings– I like to use simple seasonings like garlic, paprika, chipotle powder, salt and pepper.

Other great ingredients that you can use for your potato hash:

  • Greens like spinach, kale and swiss chard
  • Cheese
  • Green onions
  • Bacon
  • Hot sauces to top with
  • Mushrooms

Sweet Potato Hash

Delicious and nutritious sweet potatoes sautéed in a cast iron skillet with breakfast sausage, peppers and onions then topped with a runny egg.  This is a great meal that comes together quickly and always tastes great!  Perfect for quick lunches, meal prep or even dinner.

  1. In a cast iron skillet over medium heat add in the the olive oil and begin cooking the sausage.  Crumble the sausage into small pieces as it cooks.

    Once the sausage is almost cooked through, add in the peppers and onions. 

    Cook until the sausage is browned and the peppers and onions are tender. 

    Remove from the pan and set aside.

    Add more oil the pan if needed to cook the potatoes. 

    Add the potatoes to the pan, season with salt, pepper, chipotle powder, garlic powder and paprika.

    Cook, stirring occasionally, until the potatoes are browned on all sides and tender.

    Add the sausage, peppers and onions back to the pan and stir well.

    In a separate pan cook the eggs, however you like.  I recommend over easy or sunny side up.

    Serve the eggs on top of the hash and enjoy!
