Jump to Recipe Print Recipe

There's something about a skillet full of sweet potatoes, onions, and sausage that just brings comfort to the table. This Sweet Potato Hash is packed with flavor and comes together in not time, it's perfect for a quick breakfast or a Sunday brunch.

Sweet potatoes are my favorite base for this quick Sweet Potato Hash recipe, they cook faster than regular potatoes, making them ideal for my busy schedule. Plus, they're packed with nutrition and natural sweetness.

This quick potato hash recipe is a great recipe to make ahead for lunches throughout the week. It also makes great leftovers that everyone will love. Just cook the eggs when you go to serve the hash.

Sweet Potato Hash Ingredients

  • Sweet Potatoes- They are packed full of nutrition and make up the bulk of this recipe.
  • Breakfast Sausage- I used breakfast sausage for this recipe, but you can use bacon if you like. Using sausage helps to bulk up the hash and also helps to stretch it further. Plus, flavor, of course. Or you can skip the meat all together. The hash will still turn out great.
  • Onions and peppers- I put onions and bell peppers in every hash dish that I make. The flavor of the peppers, onions and potatoes mixed with a runny egg is phenomenal. Any color bell pepper or a mix is fine. Other sweet peppers can be used. Or even spicy peppers.
  • Eggs- Is it even a hash without eggs? A nice runny egg acts like a sauce that coats the hash and makes it SCRUMPTIOUS.
  • Seasonings- I like to use simple seasonings like garlic, paprika, chipotle powder, salt and pepper.

Tips:

  • Make this sausage and sweet potato hash in a cast iron skillet. Cast iron skillets are great at retaining heat and even cooking.
  • Keep the potato pieces equal to promote even cooking
  • Remove the onion and peppers from the pan after sautéing to prevent burning while the potatoes cook.

How to Make Sweet Potato Hash

Sweet Potato Hash is a simple, delicious, and versatile dish that comes together in no time! Perfect for breakfast, lunch, or dinner, this one-skillet meal makes a hearty and satisfying dish. Follow these easy steps to whip up a flavorful hash that's as nutritious as it is delicious!

STEP 1

Cook the Sausage: Heat a cast iron skillet over medium heat and add olive oil. Add the sausage to the skillet and break it into small crumbles as it cooks.

STEP 2

Add the Peppers and Onions: When the sausage is almost fully cooked, add the chopped peppers and onions to the skillet. Continue cooking until the sausage is fully browned and the vegetables are tender.

STEP 3

Set Aside: Remove the sausage, peppers, and onions from the skillet and set them aside in a bowl.

STEP 4

Prepare the Potatoes: Add more olive oil to the skillet if needed. Once heated, add the diced sweet potatoes to the pan. Sprinkle with salt, pepper, chipotle powder, garlic powder, and paprika. Cook the potatoes, stirring occasionally, until they are browned on all sides and tender. This should take about 10-15 minutes.

STEP 5

Combine Everything: Return the cooked sausage, peppers, and onions to the skillet with the sweet potatoes. Stir well to combine and heat through.

STEP 6

Cook the Eggs: In a separate skillet, prepare the eggs to your liking. For this dish, over-easy or sunny-side-up eggs work best, allowing the runny yolk to act as a sauce for the hash.

STEP 7

Serve: Plate the sweet potato hash and top each serving with a freshly cooked egg. Enjoy!

How to Customize Sweet Potato Hash

This sausage and sweet potato hash recipe is super versatile! While I love adding spinach, sourdough bread, or hot sauce to my plate, you can mix it up with some of these ingredients:

  • Greens like spinach, kale or Swiss chard
  • Cheese
  • Green onions
  • Bacon
  • Hot sauces to top with
  • Mushrooms
