Thick, chewy, and packed with peanut butter, oats, chocolate chips, and M&Ms. These Monster Cookies are so good!

These are my go-to cookies when I want to bake something fun with my kiddos. They love getting to mix in all of their favorite cookie add ins.

I've tested several versions of these cookies over the years, and this one is hands down the favorite in our house. The cookie base alone is worth making, it's soft, chewy peanut butter oatmeal cookie dough that bakes up beautifully every single time. Add in your favorite mix-ins and you've got a cookie that lives up to its "monster" name.

My Tips For Making Monster Cookies

I always recommend starting with room temperature butter, and eggs. It helps mix everything together more smoothly.

After scooping the dough, I like to gently press it down just to flatten it a little. Then I place a few extra M&Ms, chocolate chips and peanut butter chips on top of each cookie dough ball before baking.

And here's a little secret: that peanut butter oatmeal cookie base is so good, it can stand on its own. So next time you want a delicious cookie, bake up the dough without the add ins, it's worth it!

Monster Cookies

Monster Cookies

Chewy and soft Monster Cookies loaded with oats, peanut butter, chocolate chips, and M&Ms. An easy from scratch cookie that is always a hit!

Ingredients
  

  • 1 cup unsalted butter softened
  • ½ cup granulated sugar
  • ¾ cup light brown sugar packed
  • 2 large eggs
  • ½ cup peanut butter creamy or crunchy
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 cups old fashioned oats
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ¾ cup m&m candies
  • ¾ cup semi-sweet chocoltae chips
  • ½ cup peanut butter chips

Instructions
 

  • Preheat an oven to 375°F. Line a baking sheet with parchment paper.
  • In a large bowl cream the butter and sugars until light and fluffy, about 5 minutes.
  • Add the eggs, one at a time, mixing well after each addition. Then mix in the peanut butter and vanilla extract until smooth.
  • In a separate bowl, whisk together the flour, oats, baking soda, and salt. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  • Fold in the chocolate chips, M&M candies and peanut butter chips until fully combined.
  • Scoop the dough into balls (about 2 tablespoons each) and place them on the prepared baking sheet, a couple inches apart. Press them down gently to flatten them a little.
  • Bake for 12-13 minutes, or until the edges are lightly browned and the centers still look a bit soft. Cool for 5 minutes before transferring to a cooling rack. Enjoy!

Variations

One of the best things about Monster Cookies is how easy they are to customize! Here are some tasty variations:

  • Mix in butterscotch chips-the first version I ever made had these, and they were so good.
  • Change up the chocolate-use milk, dark, or even white chocolate chips.
  • Creamy or crunchy peanut butter-both work! If you only have creamy but want the extra crunch, add in some chopped peanuts, or whatever kind you have on hand.
  • Try toffee bits-they add a lovely sweet, caramelized taste to the cookies.
  • Need them for a Holiday-use seasonal M&Ms and candy eyeballs for Halloween or whatever matches the holiday you are baking for.

Freezer and Storage Tips

Store cookies in an airtight container on the counter for 4-5 days.

To freeze cookie dough: scoop it into balls, place them on a baking sheet to flash-freeze, then transfer to a freezer bag or container. When you're ready to bake thaw overnight in the fridge before baking.
