I've been baking these cookies for over 10 years, and they're still one of my most popular recipes. In fact, they're second only to my chocolate chip cookies in my house!

The Best Lemon Cookies Recipe

Years ago, I sold these cookies at a bakery where I worked, and they quickly became a customer favorite. Sweet and tangy lemon is always a match made in heaven, and these cookies prove it.

What makes these cookies so good is how bright and fresh the flavor is. There's no need for artificial flavors or food coloring here. Fresh lemon zest and juice give these cookies all the lemony goodness and a beautiful natural yellow color.

The perfect soft, chewy texture of these cookies starts with properly creaming the butter and sugar together. To get the best results, make sure your butter is softened at room temperature. Then take your time and let the mixer do the work for a few minutes until it's light and fluffy.

Here's a little trick I've learned after years of baking, add the lemon zest in with the butter and sugar while they cream together. This helps release the natural oils from the zest, which gives your cookies even more bright, fresh lemon flavor. It's a small step, but it makes a big difference.

Lemon Cookies Recipe

These soft and chewy lemon cookies are packed with fresh lemon flavor. Easy to make from scratch and perfect for anyone who loves a good lemon dessert!

Ingredients
  

  • 5 ounces unsalted butter softened
  • 1 cup granulated sugar
  • 2 lemons zested
  • 3 tablespoons fresh lemon juice
  • 2 large eggs 1 whole egg & 1 egg yolk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup powdered sugar

Instructions
 

  • Preheat your oven to 350°F and line two baking sheets with parchment paper.
  • In the bowl of a stand mixer, cream together the butter, granulated sugar, and lemon zest until light and fluffy, about 5 minutes.
  • Add in the egg, egg yolk, vanilla extract, and lemon juice. Mix until fully combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix just until combined.
  • Using a 1-ounce portion scoop, or about 2 heaping tablespoons, scoop the dough and roll each ball in powdered sugar. Place them on the prepared baking sheet, leaving a little space between each one. Bake for 12-13 minutes.
  • Cool on the baking sheet for 2 minutes before transferring to a wire rack. Enjoy!
