Chewy and soft Monster Cookies loaded with oats, peanut butter, chocolate chips, and M&Ms. An easy from scratch cookie that is always a hit!

Ingredients
  

  • 1 cup unsalted butter softened
  • ½ cup granulated sugar
  • ¾ cup light brown sugar packed
  • 2 large eggs
  • ½ cup peanut butter creamy or crunchy
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 cups old fashioned oats
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ¾ cup m&m candies
  • ¾ cup semi-sweet chocoltae chips
  • ½ cup peanut butter chips
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Preheat an oven to 375°F. Line a baking sheet with parchment paper.
  • In a large bowl cream the butter and sugars until light and fluffy, about 5 minutes.
  • Add the eggs, one at a time, mixing well after each addition. Then mix in the peanut butter and vanilla extract until smooth.
  • In a separate bowl, whisk together the flour, oats, baking soda, and salt. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  • Fold in the chocolate chips, M&M candies and peanut butter chips until fully combined.
  • Scoop the dough into balls (about 2 tablespoons each) and place them on the prepared baking sheet, a couple inches apart. Press them down gently to flatten them a little.
  • Bake for 12-13 minutes, or until the edges are lightly browned and the centers still look a bit soft. Cool for 5 minutes before transferring to a cooling rack. Enjoy!
