This isn't your average meatloaf recipe; it's my family's favorite version of the classic! Made with simply ingredients and a flavorful homemade gravy poured over top, this Meatloaf with Brown Gravy is hearty, comforting, and just plain good!

  • Ground Beef (80/20): This blend keeps the meatloaf moist and flavorful.
  • Onion & Garlic: Sautéed in butter to deepen the flavor (totally worth the extra step) but can be added directly to the meat mixture without sautéing first.
  • Breadcrumbs: To help bind the meatloaf together. Crushed crackers can be substituted.
  • Beef Stock: For the gravy. Use a good quality beef stock that is flavorful or substitute with beef base. Alternatively, your favorite store-bought brown gravy can be used.

How To Make Meatloaf with Brown Gravy

Making meatloaf from scratch is really easy. With a few key steps, you'll have a tender, flavorful meatloaf topped with a delicious brown gravy in no time.

  1. In a medium saucepan, melt 1 tablespoon of butter over medium heat. Add the diced onions and cook until soft. Stir in the minced garlic and cook for another 30 seconds. Remove from the heat and transfer to a large bowl.
  1. To the bowl, add in the ground beef, eggs, breadcrumbs, milk, Worcestershire sauce, and all of the seasonings. Mix just until combined. Be careful to not overmix.
  1. Transfer the mixture to the prepared pan and shape into an even 8x4 loaf. Bake for 55-65 minutes, or until the internal temperature reaches 160°F.
  1. Rest for 10-15 minutes before slicing. Pour over the brown gravy, saving some to serve on the side. Enjoy!

Meatloaf with Brown Gravy Recipe

This homemade Meatloaf with Brown Gravy recipe is tender, flavorful, and easy to make from scratch. The perfect comfort food dinner!

Ingredients
  

  • 1 tablespoon butter
  • ½ cup yellow or white onion small diced
  • 2 cloves garlic minced
  • 2 pounds ground beef 80/20
  • 2 large eggs
  • ¾ cup breadcrumbs
  • ¾ cup milk
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • ½ teaspoon onion powder
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons paprika
  • ½ teaspoon dried oregano
  • 2 tablespoons fresh parsley chopped
  • 1 teaspoon Worcestershire Sauce

Brown Gravy

  • 2 ½ tablespoons butter
  • 2 ½ tablespoons flour
  • 2 cups beef stock

Instructions
 

  • Preheat the oven to 350°F and line a rimmed baking sheet with parchment paper.
  • In a medium saucepan, melt 1 tablespoon of butter over medium heat. Add the diced onions and cook until soft, about 4 minutes. Stir in the minced garlic and cook for another 30 seconds. Remove from the heat and transfer to a large bowl. Set the pan aside, it will be used later to make the gravy.
  • To the bowl, add in the ground beef, eggs, breadcrumbs, milk, Worcestershire sauce, and all of the seasonings. Mix just until combined. Be careful to not overmix.
  • Transfer the mixture to the prepared pan and shape into an even 8x4 loaf. Bake for 55-65 minutes, or until the internal temperature reaches 160°F.
  • Remove from the oven and let rest for 10-15 minutes before slicing.

Brown Gravy

  • While the meatloaf is resting, place the same saucepan you used earlier back over medium heat. Melt the 2 ½ tablespoons of butter, then whisk in the flour to form a roux. Cook for 1-2 minutes, whisking constantly.
  • Slowly pour in the beef stock, whisking as you go until smooth. Continue cooking until the gravy reaches a medium thickness.
  • For a thicker gravy, use 3 tablespoons of each butter and flour when making the roux.
  • Season to taste with salt and pepper.
  • Slice the meatloaf and serve it with the gravy spooned over the top. Serve the remaining gravy on the side. Enjoy!

    Amazing!!! I am not a fan of ketchup or chili sauce so finding this recipe which calls for neither is so refreshing! Thanks! I added all the juicy juices from the bottom of the pan the meatloaf baked in into my gravy and holy h£//!!! So delicious!!!
