Potato and Hamburger Soup

An easy and hearty Potato and Hamburger Soup made in just one pot! Packed with creamy potatoes, savory ground beef and creamy goodness, this soup is a comforting favorite for lunch or dinner.

This creamy Potato and Hamburger Soup has quickly become a regular in my lunch rotation. It's hearty, cheesy, and comes together without a fuss.

I love soup season, definitely more than my husband Nick does. While he'll eat the occasional soup for dinner, I usually make soups for lunch and stock my freezer with the extras.

Key Ingredients & Substitutions

  • Ground Beef - A key ingredient that works beautifully with the creamy potatoes.
  • Chicken Stock - A good quality chicken stock for flavor. You can substitute with chicken broth if that is what you have.
  • Potatoes - Russets or red potatoes both work beautifully in this recipe. Use what you have!
  • Carrots - For added flavor and nutrients. English peas are another great veggie to add in.
  • Cheese - I usually use cheddar cheese, but you can substitute with your favorite shredded cheese mix.

How To Make Potato and Hamburger Soup

  1. Start by browning the beef in a large pot. Once cooked, remove from the pot and drain of the grease, reserving about 3 tablespoons of the grease in the pot.
  1. Add the onions and carrots to the pot and sauté for 5-6 minutes. Stir in the garlic and cook for 30 seconds.
  1. Sprinkle in the flour and stir to create a roux. Cook for 1 minute, stirring constantly.
  1. Slowly whisk in the chicken stock and milk. Whisking constantly until the roux is fully incorporated. Add in the potatoes, beef, salt and pepper. Bring to a simmer and cook until the potatoes are tender.
  1. Once the potatoes are tender remove the pot from the heat and stir in the cheese.
  1. Serve with your favorite bread or crackers. Enjoy!

Potato and Hamburger Soup

A hearty and creamy Potato and Hamburger Soup made in one pot! Filled with tender potatoes, ground beef, and cheddar cheese.

Ingredients
  

  • 1 pound ground beef
  • 1 cup onions small diced
  • 1 cup carrots peeled and small diced
  • 3 cloves garlic minced
  • 3 tablespoons all-purpose flour
  • 2 cups chicken stock
  • 2 cups milk
  • 1 ½ pounds potatoes peel and cubed ½-inch
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ cup cheddar cheese shredded

Instructions
 

  • Start by browning the ground beef in a large pot over medium high heat. Once cooked, remove from the pot and drain, reserving about 3 tablespoons of the grease in the pot to make the roux later (or use 3 tablespoons of butter).
  • Reduce the heat to medium heat and add in the diced onions and carrots. Sauté for 5-6 minutes until the onions turn translucent. Stir in the garlic and cook for about 30 seconds.
  • Now, stir in the flour and continue cooking for about one minute. Slowly whisk in the chicken stock and milk. Stir constantly to prevent clumps. Once the roux is fully incorporated add in the potatoes, cooked ground beef, salt, and pepper.
  • Bring to a simmer, stirring often, until the potatoes are tender. About 15-20 minutes.
  • Remove from the heat and stir in the shredded cheese until melted. Enjoy!
