How To Make Mashed Potatoes with Red Skin

Making mashed potatoes from scratch is simple, and this recipe comes together in just a few easy steps.

1. Boil the red potatoes until tender.

2. Drain and mash the potatoes right in the pot using a potato masher. A fork or spoon can be used if you do not have a potato masher.

3. Heat the butter and milk in a small pot just until the butter is melted.

4. Add the butter and milk mixture to the mashed potatoes, season with salt and pepper. Enjoy!

How To Prep and Reheat Mashed Potatoes

If you're planning ahead for a holiday or weeknight dinner, these mashed potatoes are easy to prep in advance.

  • To make ahead: Prepare the mashed potatoes, let them cool, then store covered in the fridge for up to 3 days.
  • To reheat: Add a splash of milk and reheat gently on the stovetop, stirring often. Red skin mashed potatoes hold up beautifully when reheated!

Around here, we love pairing these Red Skin Mashed Potatoes with oven baked pork chops or a hearty meatloaf. Whether you're serving them for Thanksgiving, a Sunday dinner, or just a cozy weeknight meal, these mashed potatoes with red skin are always a hit!

I hope your family enjoys them as much as mine does!

Ingredients

  • 2 pounds red potatoes cut into equal pieces
  • 4-6 tablespoons butter
  • ½-3/4 cup milk
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  • Place the potatoes in a large pot and cover with water. Bring to a boil over high heat and cook until tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Mash using a potato masher until you reach your desired consistency; a slightly chunky texture is typical with red potatoes with the skins left on.
  • In a small saucepan over medium-low heat, combine the milk and butter. Heat until the butter is melted and the mixture is warm.
  • Pour the milk and butter mixture over the mashed potatoes. Stir to combine. Add more milk or butter if needed to reach your desired consistency.
  • Season with salt and pepper to taste. Enjoy!
