Mashed Potatoes with Red Skin

Ingredients
  

  • 2 pounds red potatoes cut into equal pieces
  • 4-6 tablespoons butter
  • ½-3/4 cup milk
  • 1 teaspoon salt
  • ½ teaspoon pepper
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Place the potatoes in a large pot and cover with water. Bring to a boil over high heat and cook until tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Mash using a potato masher until you reach your desired consistency; a slightly chunky texture is typical with red potatoes with the skins left on.
  • In a small saucepan over medium-low heat, combine the milk and butter. Heat until the butter is melted and the mixture is warm.
  • Pour the milk and butter mixture over the mashed potatoes. Stir to combine. Add more milk or butter if needed to reach your desired consistency.
  • Season with salt and pepper to taste. Enjoy!
