Full of bright citrus flavor, these homemade Key Lime Cookies are the perfect summer dessert! They’re soft and sweet with just the right amount of tangy key lime zest and juice. They’re incredibly easy to make!

After baking a Key Lime Pie recently, I had a few leftover key limes on the counter begging to be used. I decided to try my favorite lemon cookie recipe with key limes instead, and the result truly surprised me. The flavor was even better than I imagined, perfectly citrusy and light, without being too tart. My family devoured them in no time, and I already have plans to make another batch.

Key Ingredients & Substitutions
- Butter – Use unsalted, room-temperature butter for that soft, melt-in-your-mouth texture.

Key Lime Cookies
Ingredients
- 5 tablespoons unsalted butter softened
- ½ cup granulated sugar
- 1 tablespoon key lime zest
- 2 tablespoons key lime juice
- 1 large egg
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
- ½ cup powdered sugar
Instructions
- Preheat your oven to 350°F and line two baking sheets with parchment paper.
- In the bowl of a stand mixer, cream together the butter, granulated sugar, and key lime zest until light and fluffy, about 5 minutes.
- Add in the egg, vanilla extract, and key lime juice. Mix until fully combined.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix just until combined.
- Scoop the dough into heaping tablespoons and roll each ball in powdered sugar. Place on the prepared baking sheet.
- Bake for 10 minutes. Cool on the baking sheet for 2 minutes before transferring to a wire rack. Enjoy!
