It's also a great recipe for meal prep-I make a big batch at the beginning of the week and enjoy it for quick lunches throughout the week.

  • Pecans - Toasting them enhances their flavor. If you don't have pecans, walnuts, almonds, or even pine nuts will work beautifully.
  • Cooked Chicken - Rotisserie chicken is a great shortcut, but you can also use poached, baked, or grilled chicken.

How To Make Chicken Salad with Grapes and Pecans

Ready in under one hour and perfect for meal prepping!

STEP 1

In a large mixing bowl, combine the cooked, shredded (or diced) chicken, halved grapes, chopped celery, and diced onion.

STEP 2
In a separate small bowl, whisk together the mayonnaise, Dijon mustard, salt and pepper until smooth.

STEP 3
Pour the dressing over the chicken mixture and mix until fully combined.

STEP 4
Now fold in the toasted pecans.

STEP 5

Serve immediately or chill for 20-30 minutes first.

Ingredients
  

  • 1 chicken breast or approximately 1 cup shredded
  • 1 rib celery small diced
  • ¼ cup onion small diced
  • ½ cup may
  • 2 teaspoons dijon mustard
  • ¼-1/2 teaspoon salt
  • pepper to taste
  • ½ cup red grapes halved
  • ¼ cup pecans toasted & chopped
