Ingredients
  

  • 1 chicken breast or approximately 1 cup shredded
  • 1 rib celery small diced
  • ¼ cup onion small diced
  • ½ cup may
  • 2 teaspoons dijon mustard
  • ¼-1/2 teaspoon salt
  • pepper to taste
  • ½ cup red grapes halved
  • ¼ cup pecans toasted & chopped
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • In a medium pot, boil the chicken until fully cooked. Allow to cool completely before shredding or chopping it.
  • In a large mixing bowl, combine the cooked, shredded (or diced) chicken, halved grapes, chopped celery, and diced onion.
  • In a separate small bowl, whisk together the mayonnaise, Dijon mustard, salt and pepper until smooth.
  • Pour the dressing over the chicken mixture and mix until fully combined.
  • Now fold in the toasted pecans.
  • Serve immediately or chill for 20-30 minutes first.
