These Healthy Turkey and Spinach Quesadillas are loaded with ground turkey, fresh spinach, and mozzarella cheese. You will love how easy these quesadillas are to make. They are meal prep friendly and perfect for a quick lunch.

I love making quesadillas for quick and easy lunches and dinners. Especially when I am needing something made fast and nutritious. These turkey quesadillas are not only quick and easy to make but are a healthy option that tastes great.

Key Ingredients & Substitutions

Olive Oil - Or any neutral tasting oil for cooking the ground turkey as well as browning the quesadillas.

Ground Turkey - White meat or dark meat can be used in this recipe.

Garlic - I like using freshly minced garlic. If you do not have fresh garlic, garlic powder can be used.

Tortillas - Whole wheat, regular flour tortillas, spinach or even carb counter tortillas are great in this recipe.

Cheese - I really enjoy using shredded mozzarella cheese for these turkey quesadillas. Other cheeses like cheddar, provolone or a mixture will also work.

How To Make Healthy Turkey and Spinach Quesadillas

This recipe is super easy to follow and comes together in just 30 minutes. It is equally easy to customize with what you have on hand. Use arugula, kale or even baby swiss chard in place of the spinach.

STEP 1

Cook turkey until browned and fully cooked. Add garlic and spinach and continue cooking for 1-2 minutes to wilt the spinach. Season with salt, pepper and dried oregano. Remove from pan.

STEP 2

Sprinkle ¼ of the cheese over 1 half of a tortilla. Take half of the turkey mixture and spread it over the cheese. Sprinkle ¼ of the cheese over the turkey mixture. Fold the tortilla in half and repeat with the remaining tortilla.

STEP 3

Carefully transfer one quesadilla to a preheated skillet drizzled with olive oil and cook for 60-90 seconds. Lightly coat the top tortilla with oil (lightly spray or brush with oil) flip and cook for 60-90 more. Transfer to a cutting board and continue with the remaining quesadilla. Cut each quesadilla into 4 equal pieces. Enjoy!

Reheating Tip

The best way to reheat a leftover quesadilla is in the oven. Microwaving a leftover quesadilla leaves you with a soft, "gummy" tortilla. Which isn't very pleasant. I recommend placing the quesadilla in a 350° F oven for 5-10 minutes.

Healthy Turkey and Spinach Quesadillas

Ground turkey, fresh spinach and mozzarella cheese make up these super quick and healthy Turkey and Spinach Quesadillas.  30-minutes and done, making them perfect for lunch or dinner any day of the week.

Ingredients
  

  • 1 1ablespoon olive oil
  • 8 ounces ground turkey
  • 1 clove garlic minced
  • 2-3 cups fresh spinach
  • ¼ teaspoon salt
  • To Taste pepper
  • ¼ teaspoon dried oregano
  • 2 large tortillas
  • 2 cups mozzarella cheese shredded

Instructions
 

  • In a large skillet over medium heat add the olive oil.  Once hot add in the turkey.  Crumble the meat up as it cooks.  
  • Once the meat is browned and fully cooked add in the minced garlic and spinach.  Cook for 1-2 minutes to wilt the spinach. Season with salt, pepper and dried oregano. Remove from pan.

Notes

The amount of spinach is totally up to you! Use more or less than the 2-3 cups mentioned in the ingredient list!
