🍅Ingredients
You only need 8 ingredients to make this simple chicken dish!
- Chicken – I like using boneless skinless chicken breasts for this recipe.
- Seasonings – Only salt, pepper, and garlic powder are needed.
- Oil – Olive oil or any neutral tasting oil is used for searing the chicken breasts.
- Tomatoes – Fresh tomatoes work best in this recipe.
- Cheese – Fresh mozzarella cheese or shredded mozzarella can be used.
- Basil – Fresh basil is best in this recipe!
🥣How To Make Bruschetta Chicken
STEP 1
Mix the tomatoes, basil, mozzarella cheese, and salt together. Set aside to let the flavors marry.
STEP 2
Slice each chicken breast horizontally into thinner slices to expedite cooking. Thinner pieces cook more quickly. However, if you favor larger portions, you may opt to keep the breasts intact.
STEP 3
Season each side of the chicken breasts with the remaining salt, pepper and garlic powder.
STEP 4
Pan-sear the chicken breasts in a large sauté pan with olive oil over medium-high heat. Cook the breasts for 4-6 minutes on each side, or until the internal temperature of the chicken reaches 165°F.
STEP 5
Spoon the tomato mixture onto each chicken breast and place them in the oven. Broil for 1-3 minutes, or until the cheese has melted and is lightly browned. Enjoy!
