A chicken dish that is perfect for Summer! Pan-seared chicken topped with fresh basil, tomatoes, and melted mozzarella cheese. This 30-minute chicken dish is sure to become a family favorite.
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Mix the tomatoes, basil, mozzarella cheese, and ½ teaspoon salt together. Set aside to let the flavors marry.
Slice each chicken breast horizontally into thinner slices to expedite cooking. Thinner pieces cook more quickly. However, if you favor larger portions, you may opt to keep the breasts intact.
Season each side of the chicken breasts with the remaining 1 ½ teaspoons salt, pepper and garlic powder.
In a large skillet over medium-high heat, pan sear the chicken breasts with the olive oil. Cook the breasts for 4-6 minutes on each side, or until the internal temperature of the chicken reaches 165°F.
Spoon the tomato mixture onto each chicken breast and place them in the oven. Broil for 1-3 minutes, or until the cheese has melted and is lightly browned. Enjoy!
