Bruschetta Chicken

A chicken dish that is perfect for Summer! Pan-seared chicken topped with fresh basil, tomatoes, and melted mozzarella cheese. This 30-minute chicken dish is sure to become a family favorite.

Ingredients
  

  • 3 chicken breasts cut horizontally
  • 2 teaspoons salt divided (1 ½ and ½)
  • 1 teaspoon pepper
  • 1 ½ teaspoons garlic powder
  • 2 tablespoons olive oil
  • 1 large tomato small diced
  • ½ cup mozzarella cheese sliced or shredded
  • 5 large fresh basil leaves thinly sliced
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Mix the tomatoes, basil, mozzarella cheese, and ½ teaspoon salt together. Set aside to let the flavors marry.
  • Slice each chicken breast horizontally into thinner slices to expedite cooking. Thinner pieces cook more quickly. However, if you favor larger portions, you may opt to keep the breasts intact.
  • Season each side of the chicken breasts with the remaining 1 ½ teaspoons salt, pepper and garlic powder.
  • In a large skillet over medium-high heat, pan sear the chicken breasts with the olive oil. Cook the breasts for 4-6 minutes on each side, or until the internal temperature of the chicken reaches 165°F.
  • Spoon the tomato mixture onto each chicken breast and place them in the oven. Broil for 1-3 minutes, or until the cheese has melted and is lightly browned. Enjoy!
