Tips for Making Birthday Cake Cookies
When making these cookies, the butter matters. It needs to be completely softened to room temperature. This is what lets the butter and sugar cream properly for that perfect, soft, cake-like texture.
For the flavor, I use clear vanilla extract. It's the same flavor in so many of the birthday cakes we grew up with. While pure vanilla will work perfectly fine in these cookies, clear vanilla extract captures that nostalgic "birthday cake" taste perfectly.
Sprinkles in the dough are a must! When testing this recipe, I found that adding sprinkles directly into the dough gives them a cheerful pop of color that helps them stand up to their name.

The dough must be chilled! I've tried baking them after just two hours of chilling and they weren't as good. The overnight chill is worth it! Do not try baking them without chilling them first!
And finally, watch the bake time closely. Every oven is different. My sweet spot is 12 minutes. You want the edges and the centers soft. Overbaking will take away from that perfect cake-like texture.

Birthday Cake Cookies
Ingredients
- 4 ounces unsalted butter softened
- ¾ cup granulated sugar
- 1 large egg
- 1 tablespoon clear vanilla extract
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup sour cream
- ½ teaspoon baking soda
- 1 ½ cups all-purpose flour
- ¾ cup sprinkles separated ¼ cup & ½ cup
Instructions
- In a small bowl, stir together the baking soda and sour cream. Set aside until needed.
- In the bowl of a mixer, fitted with a paddle cream together the butter and sugar.
- Add the salt, vanilla, baking powder and egg. Mix on medium speed for 1 minute, until combined. Now mix in the sour cream and baking soda mixture. Mix well.
- Add the flour and ¼ cup of the sprinkles. Mix on low speed just until the flour is fully incorporated. Cover the bowl and refrigerate overnight.
- Preheat oven to 350°F. Line a baking sheet with parchment paper. Scoop two heaping tablespoons per cookie, press the tops in the remaining sprinkles and place on the baking sheet.
- Bake for 12-13 minutes, or until the edges are just starting to turn light brown. Enjoy!
