Are you tired of throwing out your sourdough discard? These Sourdough Discard Crackers with Herbs and Cheese are an easy, flavorful way to make the most of your sourdough starter while minimizing food waste. Rather than tossing it out, you can turn that excess starter into delicious, crunchy crackers—perfect for snacking or serving alongside cheese boards.

If you are like me, you have probably gone down the rabbit hole of recipes to that utilize your sourdough discard. I hate food waste and throwing away something I have worked so hard to start and maintain is hard to do sometimes. That's why I love quick and easy recipes like these sourdough crackers, which only take a few minutes to prepare and utilize what would otherwise be thrown away.

Why You'll Love These Crackers

  • Quick & Easy: The entire process takes about 45 minutes, including baking time, making these crackers perfect for a last-minute snack.
  • Customizable: Feel free to swap the Parmesan for other cheeses, such as cheddar or gouda, and experiment with different herbs and spices.
  • No Waste: Instead of discarding your sourdough starter, you’re putting it to good use, creating a snack that’s both easy and delicious.

Ingredients

  • Sourdough Discard – The portion of the sourdough starter that is removed and discarded during the feeding process.
  • Butter – Unsalted butter, melted and cooled slightly.
  • Salt
  • Cheese – Grated Parmesan cheese for a rich, nutty flavor.
  • Herbs – I enjoy using a premade Italian seasoning blend, which includes dried basil, marjoram, rosemary, and oregano.
