Roasted Garlic Aioli

This Roasted Garlic Aioli recipe is packed full of roasted garlic flavor. Aioli is a great way to elevate the flavor of any dish, even if it is just a sandwich.

Aioli itself is a sauce found in a lot of Mediterranean dishes. It is an emulsion of garlic, olive oil, salt and egg yolks. It is similar to mayonnaise, just with the addition of garlic and olive oil instead of canola oil, which is usually what is used in mayonnaise. This aioli recipe uses mayonnaise, we can cheat a little bit every now and then, right? Either way, it is delicious and worth the extra effort to add a punch of flavor to your dish.

How to Use an Aioli

  • Chicken sandwiches
  • Chicken wraps
  • Nachos
  • Tacos

When roasting the garlic, I like to roast one to two heads at a time. It is nice to have extra roasted garlic on hand to add to other dishes as I am cooking. Roasted garlic has an amazing flavor. I also like to roast the garlic in a lot of oil. You do not need to use a lot of oil, but the roasted garlic infuses the oil, so I like to use about a cup when I do roast garlic. It is great to keep on hand to use while cooking. I just pour the oil into a mason jar to store it and use it in place of oil when sautéing veggies, or searing meat. You can even use it to make a vinaigrette. It is great to coat your potatoes in for baking. Talk about great potato skins, they are the best!

Roasted Garlic Aioli

This easy roasted garlic aioli uses pre-made mayonnaise to cut down on time.  Perfect for adding to burgers, sandwiches, wraps and more.   It is definitely worth taking the extra step to roast the garlic.

Ingredients
  

Roasted Garlic Aioli

  • ½ Cup mayonnaise
  • ½-1 teaspoon fresh lemon juice
  • 4 Cloves roasted garlic
  • To Taste salt

Roasted Garlic

  • 1 head garlic
  • ¼ Cup olive oil canola or vegetable oil will work too

Instructions
 

    1. Preheat oven to 400 °F.  In a small pan place a piece of foil large enough to wrap the garlic.
    2. Cut the top of the garlic off just enough to expose the cloves.  Place it in the foil and pour over the oil.  Close the foil and place the pan into the oven.
    3. Roast for 40 minutes and check the garlic.  You can use a pair of tongs to gently squeeze the head of garlic. You are looking for the garlic to be soft and browned.  
    4. Take out of the oven and let cool before using.

Make the Ailoi

    1. In a small bowl mix together the mayonnaise and lemon juice.  
    2. On a cutting board, using the back of your knife, mash the garlic cloves.  Add them to the bowl of mayonnaise.  Season with salt.  Enjoy!
