This easy roasted garlic aioli uses pre-made mayonnaise to cut down on time. Perfect for adding to burgers, sandwiches, wraps and more. It is definitely worth taking the extra step to roast the garlic.
¼Cupolive oilcanola or vegetable oil will work too
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Preheat oven to 400 °F. In a small pan place a piece of foil large enough to wrap the garlic.
Cut the top of the garlic off just enough to expose the cloves. Place it in the foil and pour over the oil. Close the foil and place the pan into the oven.
Roast for 40 minutes and check the garlic. You can use a pair of tongs to gently squeeze the head of garlic. You are looking for the garlic to be soft and browned.
Take out of the oven and let cool before using.
Make the Ailoi
In a small bowl mix together the mayonnaise and lemon juice.
On a cutting board, using the back of your knife, mash the garlic cloves. Add them to the bowl of mayonnaise. Season with salt. Enjoy!
