Making make-ahead meals has become one of my favorite ways to cook in the last year. Especially now, with summer in full swing, I have been finding myself prepping dinner first thing in the morning to avoid heating up the house in the evening. When the heat index is 111° F like today, the last thing I want to do is stand in front of the stove.

What I love about this Chicken Burrito Bowl recipe is that it is super easy to make ahead and great served cold or hot. I just make each component, cool them, and pop them in the refrigerator until we are ready to eat. Then all that needs to be done is let everyone assemble their bowls with their favorite toppings. If you are really planning ahead, you can even marinate the chicken overnight. Of course, this dish can be prepared and served immediately.

Ingredients for Easy Chicken Burrito Bowls

One of my favorite things about making this dish is how easy it is to customize it. This makes it easy to use everyone’s favorite ingredients.

  • Chicken- I like to use chicken thighs because they have such great flavor. Chicken breasts are also really good in this recipe.
  • Black Beans- Canned or freshly cooked.
  • Corn- For the corn salsa, this is optional, but highly recommended!
  • Onions- Yellow, white or red will work just fine.
  • Jalapeño Peppers- If you are not a fan of spicy peppers substitute will bell peppers.
  • Avocado- For added texture, flavor and protein.
  • Cilantro- For flavor!
  • Rice- Plain white rice. Or you can substitute the rice for cauliflower rice.
  • Tomatoes- Optional
  • Sour Cream- Optional
  • Limes- Fresh tastes best but concentrated can be used.
  • Spices- Various spices used for the chicken and the corn salsa.

Additional Ingredients

You can make this chicken burrito bowl however you like. Simply add in your favorite toppings like you would for tacos. Here are a few suggestions.

Lettuce

Pickled Jalapeños

Cheese- Cheddar, Mexican blend, cotija or even queso fresco.

Pico de Gallo

Guacamole

Your Favorite Salsa


This recipe features a nice creamy white gravy, loaded with lots of pepper and browned breakfast sausage. It is so good! Did I mention that it is my favorite? The delicious bits of seasoning left on the bottom of the pan after cooking the sausage are what adds tons of flavor to this gravy.


How to Make Chicken Burrito Bowls

Cook the Chicken– Season and cook the chicken.

Cook Rice- Cook the rice according to the package directions.

Assemble Corn Salsa– Combine the ingredients for the corn salsa in a medium bowl. Stir until fully combined. Set aside until needed.

Prep Remaining Ingredients– Slice the avocado and set aside. Dice the tomatoes and set aside. Mince the cilantro and set aside.

Assemble Burrito Bowls- Combine the cooked rice, black beans, chicken and all of your favorite toppings. Enjoy!


Should You Marinate the Chicken for Chicken Burrito Bowls?

This is totally up to you. The chicken tastes fantastic when cooked immediately after seasoning it. It also tastes really good when marinated.

If you are wanting to marinate the chicken mix all of the spices together with 1/4 cup of olive oil and 2 tablespoons of lime juice. Mix until blended and pour into a container. Add the chicken, making sure to coat the chicken with the marinate, and refrigerate for up to 1 day before cooking.


How to Meal Prep Chicken Burrito Bowls?

Follow the recipe instructions for preparing each component of the dish. Cool and place each component in containers. Refrigerate until ready to serve. You can heat up the chicken and rice if you prefer or serve the dish cold. It’s great either way.

Instructions

  1. Cook the rice according to the package instructions.

  2. While the rice is cooking start on the chicken.  Pat the chicken dry and season it on both sides with the seasonings.  

  3. Preheat an oven to 375° F.  In a large skillet over medium high heat add 2 tablespoons of olive oil.  Add in the chicken and brown on both sides.  Remove the skillet from the heat and place in the preheated oven.  Cook for 20 minutes or until the chicken reaches an internal temperature of 165°F.  Cool for 10 minutes then cut into bite size pieces.

  4. In a medium bowl combine the corn, onions, peppers, cilantro, lime juice and all of the seasonings for the corn salsa.  Mix until fully combined.

  5. To serve the burrito bowls:  Add rice, black beans and chicken to each bowl.  Top with corn salsa, avocado, tomatoes and sour cream.  Enjoy!
