Black Bean and Chickpea Salad

I love throwing together easy salads like this Black Bean and Chickpea Salad. It's full of fresh veggies and herbs, and the best part? It only takes 10 minutes to make. Perfect for busy weekdays or meal prepping when you don't have much time.

This salad has been one of my all-time favorites for years. I like to scoop it up with tortilla chips or serve it over some grilled chicken for a super satisfying, protein-packed meal.

Black Bean and Chickpea Salad INGREDIENTS

  • Chickpeas (Garbanzo Beans): 1 can rinsed and drained.
  • Black Beans: 1 can rinsed and drained.
  • Avocado.
  • Onion: Red, yellow, or white onions can be used.
  • Tomatoes: I like using cherry or grape tomatoes in this recipe. Use what you have on hand.
  • Cilantro: Fresh cilantro for flavor.
  • Lime: The lime is used to add fresh lime juice to the dish.
  • Seasonings/Spices: A combination of garlic powder, chipotle powder, cumin, salt, and pepper is used to season the salad.

How To Make Easy Black Bean Salad

With just a few simple ingredients, this salad comes together in just 10 minutes!

STEP 1

Add the chickpeas, black beans, red onion, tomatoes, cilantro, lime juice and all of the seasonings to a bowl and mix well to combine.

STEP 2

Now stir in the avocado. Enjoy chilled or served at room temperature.

What to serve with black bean salad

  • Grilled Chicken or Fish: Add a protein boost for a hearty meal.
  • Tortilla Chips: Turn it into a chunky dip. My favorite way to enjoy this black bean and chickpea salad!
  • With Tacos: Add it as a side to your favorite tacos.

How to Meal Prep Black Bean and Chickpea salad

Combine all the ingredients, except the avocado, in a large bowl. Mix well, cover, and refrigerate until ready to serve. Just before eating, dice the avocado and gently fold it into the salad for the best flavor and texture.

Ingredients
  

  • 15 ounces chickpeas (canned) rinsed and drained
  • 15 onces black beans (canned) rinsed and drained
  • ¼ cup red onion small diced
  • ½ cup cherry tomatoes halved or quartered
  • 3 tablespoons cilantro minced
  • 1-2 limes juiced
  • ½ teaspoon garlic powder
  • 1 ½ teaspoons cumin
  • 1 teaspoon salt
  • to taste pepper
  • to taste chipotle powder
  • 2 large avocados diced

Instructions
 

  • Add the chickpeas, black beans, red onion, tomatoes, cilantro, lime juice and all of the seasonings to a bowl and mix well to combine.
