I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Cook the rice according to the package instructions.
While the rice is cooking start on the chicken. Pat the chicken dry and season it on both sides with the seasonings.
Preheat an oven to 375° F. In a large skillet over medium high heat add 2 tablespoons of olive oil. Add in the chicken and brown on both sides. Remove the skillet from the heat and place in the preheated oven. Cook for 20 minutes or until the chicken reaches an internal temperature of 165°F. Cool for 10 minutes then cut into bite size pieces.
In a medium bowl combine the corn, onions, peppers, cilantro, lime juice and all of the seasonings for the corn salsa. Mix until fully combined.
To serve the burrito bowls: Add rice, black beans and chicken to each bowl. Top with corn salsa, avocado, tomatoes and sour cream. Enjoy!
