Ingredients
  

Chicken

  • 4 boneless, skinless chicken thighs or chicken breasts
  • ½ Teaspoon onion powder
  • 1 Teaspoon garlic powder
  • ½ Teaspoon chili powder
  • 1 Teaspoon paprika
  • 2 Tablespoon cumin
  • ½ Teaspoon oregano
  • 1 Pinch chipotle powder or cayenne
  • 1 ¼ teaspoon salt
  • To Taste pepper
  • 2 tablespoon olive oil

Corn Salsa

  • 1 ½ cup corn cooked
  • Cup onions small diced
  • 2 jalapeños small diced
  • 2 tablespoon cilantro minced
  • 2 tablespoon fresh lime juice
  • ½ Teaspoon salt
  • To Taste pepper
  • ¼ Teaspoon chili powder
  • ½ Teaspoon cumin
  • ¼ Teaspoon paprika
  • ¼ Teaspoon garlic powder

Remaining Ingredients

  • 2 cup rice
  • 1 avocado sliced or diced
  • 1 Large tomato small diced
  • 1 (15 oz.) can black beans drained and rinsed
  • As Needed sour cream
  • As Needed cilantro
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • Cook the rice according to the package instructions.
  • While the rice is cooking start on the chicken.  Pat the chicken dry and season it on both sides with the seasonings.  
  • Preheat an oven to 375° F.  In a large skillet over medium high heat add 2 tablespoons of olive oil.  Add in the chicken and brown on both sides.  Remove the skillet from the heat and place in the preheated oven.  Cook for 20 minutes or until the chicken reaches an internal temperature of 165°F.  Cool for 10 minutes then cut into bite size pieces.
  • In a medium bowl combine the corn, onions, peppers, cilantro, lime juice and all of the seasonings for the corn salsa.  Mix until fully combined.
  • To serve the burrito bowls:  Add rice, black beans and chicken to each bowl.  Top with corn salsa, avocado, tomatoes and sour cream.  Enjoy!
