These Berry Breakfast Bars are one of my favorite quick and easy breakfast recipes. Besides their wonderful flavor, what I love about these bars is how easy it is to customize them. You can easily swap out the berries for other fruits, like diced apples or pears, for a seasonal twist.

- u003cstrongu003eOatsu003c/strongu003e - This recipe uses u003cstrongu003eold fashioned oatsu003c/strongu003e.
- u003cstrongu003eFlouru003c/strongu003e - Plainu003cstrongu003e all-purpose flouru003c/strongu003e is needed. Gluten free flours can be substituted. I have used oat flour successfully in this recipe.
- u003cstrongu003eButteru003c/strongu003e - Unsalted u003cstrongu003ebutteru003c/strongu003e or melted coconut oil.
- u003cstrongu003eSugarsu003c/strongu003e - Both u003cstrongu003ebrown sugaru003c/strongu003e and u003cstrongu003egranulated sugaru003c/strongu003e are needed.

- u003cstrongu003eBerriesu003c/strongu003e - u003cstrongu003eFresh or frozen berriesu003c/strongu003e. A great combination is strawberries, blackberries and raspberries.
- u003cstrongu003eCornstarch u003c/strongu003e- Used to help thicken the berries to a jam like consistency when the bars are baking.

STEP 1
Combine the melted butter with the oats, vanilla extract, brown sugar, salt and flour. Mix until well combined. Press ⅓ of the mixture into the prepared pan, reserve the remaining for the top.
STEP 2
Place half of the fruit into the pan, slicing strawberries into smaller pieces if using. Evenly distribute all of the cornstarch and half of the granulated sugar over the fruit. Drizzle lemon juice on top. Finish by adding the remaining fruit and sugar.
STEP 3
Sprinkle over the reserved crumble, gently squeeze some of the crumble together as you are putting it on top of the fruit to make larger crumbles. Bake for 30 minutes, remove from the oven and top with sliced almonds (optional) continue baking for 10 more minutes. Cool completely before cutting. Enjoy!

Because of the fruit filling these breakfast bars need to be stored in the refrigerator. Store the Berry breakfast Bars in the refrigerator for up to 7 days. If they last that long! Allow to come up to room temperature before serving.

Berry Breakfast Bars
Ingredients
- 6 ounces butter melted

- ¾ cup all-purpose flour
