Berry Breakfast Bars
Easy Berry Breakfast Bars, made with either fresh or frozen berries, are quick and simple to prepare, making them an ideal healthy breakfast choice.

- 6 ounces butter melted
- 1 teaspoon vanilla extract
- 1 cup old fashioned oats
- ⅓ cup light brown sugar
- ¾ cup all-purpose flour
- ¼ teaspoon salt
- 2 cups fresh or frozen berries
- 1 teaspoon cornstarch
- 1 tablespoon fresh lemon juice
- 1 tablespoon granulated sugar
Preheat an oven to 375° F and line an 8x8 baking dish with parchment paper.
Combine the melted butter with the oats, vanilla extract, brown sugar, salt and flour. Mix until well combined. Press ⅓ of the mixture into the prepared pan, reserve the remaining for the top.
Place half of the fruit into the pan, slicing strawberries into smaller pieces if using. Evenly distribute all of the cornstarch and half of the granulated sugar over the fruit.
Drizzle lemon juice on top. Finish by adding the remaining fruit and sugar.
Sprinkle over the reserved crumble, gently squeeze some of the crumble together as you are putting it on top of the fruit to make larger crumbles.
Bake for 30 minutes, remove from the oven and top with sliced almonds (optional) continue baking for 10 more minutes.
Cool completely before cutting into 8 equal bars. Enjoy!
