When you are needing dinner fast, one pot dishes are always winners. This One Pot Cheesy Taco Skillet recipe comes together in just 30 minutes. It's loaded with ground beef, black beans and a layer of melted cheese, making this taco skillet a satisfying dish that is always a hit with the family.

I love quick and easy recipes like this taco skillet. Anytime I can add a simple ground beef recipe to my recipe repertoire, I jump on it. When we are talking taco flavored anything, I know it will be a hit with my family.
We often serve this one pot cheesy taco skillet with fresh tortillas and sliced avocado or over tortilla chips for a quick taco salad.

Ingredients
You do not need a ton of ingredients to make this One Pot Cheesy Taco Skillet. Which is one of my favorite things about this recipe, aside from be prepared in one pot. It is nice to only have to use a handful of ingredients to make a nutritious meal.
- Ground Beef - Lean ground beef is perfect for this taco skillet recipe. You can also substitute it with ground chicken or turkey.
- Onions - Yellow (or white) onions are used in the main part of the dish for flavor. Green onions are used as garnish, which is optional.
- Garlic - Freshly minced garlic for flavor.
- Tomato Paste - Adds a lovely rich tomato flavor to the dish.
- Canned Rotel - One can of Rotel is needed for this recipe. It can be substituted with diced tomatoes if needed.
- Black Beans - Two 14-ounce cans are needed for this recipe. If using dry beans that you prepare yourself, use 1 to 1 ½ cups of dried beans.
- Cheese - Use your favorite taco cheese. I like using cheddar, but colby jack or taco blends can also be used.
- Seasonings - I use a combination of salt, pepper, cumin, garlic powder, onion powder, paprika, chili powder, chipotle powder, and dried oregano. Premade taco seasoning can also be used.
How To Make One Pot Cheesy Taco Skillet
1. First sauté the ground beef and onions until the meat is fully cooked and the onions are tender. Now stir in the minced garlic and cook for another 30 seconds. Strain off the fat and return to the skillet.
2. Stir in the tomato paste and seasonings and cook for 1-2 minutes. Just until the tomato paste is fully incorporated.
3. Add in the rotel and black beans. Stir well to combine.
4. Sprinkle over the shredded cheese and pop in the oven for 3-4 minutes.
5. Garnish with green onions and cilantro and serve. Enjoy!

- Serve in a bowl with avocado, lettuce, and tomato for a protein-packed taco bowl.
- Tortilla chips turn this delicious taco skillet into a fantastic taco salad.
- Serve with warmed flour tortillas to make a taco or burrito.

- Serve over a bed of white rice or Spanish rice.
Storage Tip
Store leftovers or in an airtight container in the refrigerator up to 7 days. Leftovers can also be frozen in an airtight container or freezer bag for up to 3 months.

One Pot Cheesy Taco Skillet
Ingredients
- 1 ½ lb ground beef
- ½ Large onion small diced
- 3 Cloves garlic minced
- 2 tablespoon tomato paste
- 2 teaspoon salt
- To Taste pepper
- 1 Tablespoon cumin
- 1 Tablespoon garlic powder
- 2 teaspoon paprika
- 1 Teaspoon chili powder
- ¼-1/2 Teaspoon chipotle powder or cayenne powder
- 1 Teaspoon onion powder
- ½ Teaspoon dried oregano
- 10 oz rotel 10 oz. can
- 2 (14-oz.) Cans black beans drained and rinsed
- 2 cup cheddar cheese shredded
- As Needed green onions for garnish
- As Needed cilantro for garnish
Instructions
- In a large skillet over medium heat combine the ground beef and diced onions. Sauté until the beef is fully cooked and the onions are tender.
- Add the minced garlic to the skillet and continue cooking for 30 seconds. Remove from the heat and strain off the fat.
- Return the meat back to the skillet and place over medium low heat. Combine the tomato paste and all of the seasonings with the meat. Cook just until the tomato paste is fully incorporated. Turn the heat off.
- Turn the oven to broil. Add the rotel and black beans to the skillet, stirring well to combine.
- Sprinkle the cheese over the mixture and place in the oven for 3-4 minutes to melt the cheese.
- Garnish with sliced green onions and chopped cilantro. Enjoy!
