A fast, flavor-packed 30-minute weeknight dinner made in one pan! Seasoned ground beef, black beans, and zesty Rotel topped with melted cheddar cheese.
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Heat a large skillet over medium heat. Add the ground beef and diced onions, cooking until the meat is browned and onions are tender (about 6-8 minutes). Stir in the minced garlic and cook for 30 seconds until fragrant.
Drain off any excess grease, return the skillet to medium-low heat, and stir in the tomato paste until fully incorporated into the beef.
Stir in the drained black beans, canned Rotel, and taco seasoning. Mix well until everything is evenly combined and heated through (about 3-4 minutes).
Turn off the stovetop heat and sprinkle the shredded cheddar cheese evenly over the top.
Place under the oven broiler on high for 3 to 4 minutes until the cheese is melted and bubbly. Garnish with chopped cilantro if desired. Enjoy!
