I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.
Instructions
Preheat your oven to 350°F and line two baking sheets with parchment paper.
In the bowl of a stand mixer, cream together the butter, granulated sugar, and lemon zest until light and fluffy, about 5 minutes.
Add in the egg, egg yolk, vanilla extract, and lemon juice. Mix until fully combined.
In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients and mix just until combined.
Using a 1-ounce portion scoop, or about 2 heaping tablespoons, scoop the dough and roll each ball in powdered sugar. Place them on the prepared baking sheet, leaving a little space between each one. Bake for 12-13 minutes.
Cool on the baking sheet for 2 minutes before transferring to a wire rack. Enjoy!
