These Sourdough Discard Crackers with Herbs and Cheese are an easy, flavorful way to make the most of your sourdough starter while minimizing food waste. Rather than tossing it out, you can turn that excess starter into delicious, crunchy crackers—perfect for snacking or serving alongside cheese boards.
If you are like me, you have probably gone down the rabbit hole of recipes to that utilize your sourdough discard. I hate food waste and throwing away something I have worked so hard to start and maintain is hard to do sometimes. That’s why I love quick and easy recipes like these sourdough crackers, which only take a few minutes to prepare and utilize what would otherwise be thrown away.
- Quick & Easy: The entire process takes about 45 minutes, including baking time, making these crackers perfect for a last-minute snack.
- Customizable: Feel free to swap the Parmesan for other cheeses, such as cheddar or gouda, and experiment with different herbs and spices.
- No Waste: Instead of discarding your sourdough starter, you’re putting it to good use, creating a snack that’s both easy and delicious.
- Sourdough Discard – Sourdough discard refers to the portion of the starter that is removed and discarded during the feeding process.
- Butter – Unsalted butter that has been melted and cooled slightly.
- Salt
- Cheese – Grated parmesan cheese for a rich nutty flavor.
- Herbs – I enjoy using a premade Italian seasoning blend which consists of dried basil, marjoram, rosemary and oregano.
Making these crackers is easy and doesn’t require any fancy equipment or long preparation times. In just 45 minutes, you’ll have a batch of flavorful, crunchy crackers ready to enjoy.
STEP 1
Mix together the sourdough discard, melted butter, salt, parmesan cheese and herbs.
STEP 2
Spread the mixture onto a baking sheet lined with parchment paper until it’s approximately 1/8 inch thick. Using an offset spatula comes in handy here. Sprinkle with a little extra salt if desired.
STEP 3
Place in the oven for 10 minutes. Remove from the oven and score into squares or any shape and size that you want the crackers to be. Place the pan back in the oven and bake for another 15-20 minutes or until the crackers are dry and crisp. Cool completely before storing. Enjoy!
Allow the crackers to cool completely before placing them in an airtight container. The crackers can be stored for up to one week.
