No Bake Christmas Peanut Butter Ritz Crackers

The perfect no bake holiday treat!

These No Bake Christmas Peanut Butter Ritz Crackers are one of my family’s favorite no bake treats. Buttery Ritz crackers, creamy peanut butter, almond bark and sprinkles, is all you need to make these delicious Christmas “cookies”. I like to call them “cookies” even though they are crackers, because they totally give me cookie vibes.

No bake treat recipes are always good to have in your repertoire, especially one as yummy as this one. I have never met a person that didn’t fall in love with them after the first bite. I know I did the first time I tried them. I am sure you and your family will too!

Besides being SO GOOD these cookies come together in just 1 hour. Yes, you read that right, 1 hour! If you are needing them super quick, skip the extra decorating and leave them plain. Trust me, they are great without sprinkles or the pretty Christmas trees piped on top.

Ingredients Needed

  • Ritz Crackers
  • Peanut Butter – Creamy works best but crunchy can be used.
  • Almond Bark – This can be found in the baking aisle at your local grocery store.
  • Sprinkles – I found a few different Christmas sprinkles mixes, one with stars for the tree topper.
  • Food coloring – If you decide to pipe the Christmas trees. Or you can buy colored candy melts.

How To Make No Bake Christmas Peanut Butter Ritz Crackers

  • Assemble Cookies – Lay out a single layer of Ritz crackers and top each cracker with 1 to 1 1/2 tablespoons of peanut butter. Top with another cracker, pressing down gently so that the top cracker stays.
  • Refrigerate – Place in the refrigerator to chill (this helps keep the crackers together for dipping) while you melt the almond bark.
  • Melt Almond Bark – Follow the directions on the package to ensure you do not burn the almond bark. Use a tall container to melt your almond bark in rather than a wide one. This helps make the dipping easier.
  • Dip in Almond Bark – Using a fork, fully dip each “cookie” in the almond bark. Let the excess drip off before placing on a parchment lined baking sheet. If using just sprinkles, add them as you go. The almond bark sets up pretty quickly.
  • Pipe Trees – Take the remaining almond bark, separate and color green and red. Place in a piping bag and cut a tiny hole. Pipe the tree on fully set cookies and decorate with sprinkles. Use the red to make bows or just a drizzle. Or us melted candy melts.
  • Rest – Rest 10 minutes on the counter or 6 minutes in the refrigerator. Enjoy!

Storing No Bake Christmas “Cookies”

These cookies will last about 1 week after making them. If you have any left, place them in an airtight container and store at room temperature. No need to refrigerate these little cookies.
