I am always cooking up big batches of soups to stock my freezer with for the winter. This taco soup has to be one of my favorites. It is super easy to make, which is one of the reasons I like it so much. It seriously tastes like it has been simmering away on the stove for hours, but only takes about 40 minutes!

Oh, and the toppings! With so many topping options, it is easy for everyone to customize their own soup to their liking. Some family favorites are shredded cheese, cilantro, sour cream and tortillas chips.

How to Make Ground Turkey Taco Soup

This soup is so easy to make and can be ready in just 40 minutes. Honestly it could be ready in just 25-30 minutes, if you choose to not let it simmer for 20 minutes. I prefer to let it simmer to develop more flavor. But if time is not on your side, you can certainly serve it sooner.

Sauté- Combine the peppers and onions in a dutch oven over medium heat. Sauté until tender.

Cook Meat- Add the ground turkey to the pot with peppers and onions. Cook until browned and fully cooked. Add in the garlic and sauté for 30 seconds.

Remaining Ingredients- Add in the remaining ingredients, stir to combine. Bring to a simmer and cook for 20 minutes.

Serve with your favorite toppings. Enjoy!

Freezing Ground Turkey Taco Soup

One of my favorite meals to prep and freeze are soups. Soups are hands down the easiest freezer meals to make. They are also the easiest to make in large batches. Which makes them perfect for freezer meals. I love having soups in the freezer that I can thaw and reheat for a quick and easy lunch or dinner.

To freeze soups: Portion, allow to cool to room temperature and freeze for up to 6 months.

Instructions

  1. In a dutch oven (or large pot) over medium heat add in the olive oil.  Add in the onions and peppers, sauté until soft.  

  2. Now add the turkey to the pot, cook for 5-6 minutes, crumbling the turkey as it browns.  Once done add in the garlic and cook for 30 seconds.

  3. Season with all of the seasonings.  Stir until fully combined.  Now add in the remaining ingredients.  

  4. Bring to a simmer and cook for 20 minutes.

  5. Serve with your favorite toppings.  Enjoy!  

Note

*If using low sodium or no salt added veggies/chicken stock, add the salt to taste.
