Ground Turkey Taco Soup
A quick, easy and extremely flavorful Ground Turkey Taco Soup. Made with good-for-you ingredients like ground turkey, black beans and chicken stock, this soup is definitely a winner anytime.

- 2 tablespoons olive oil
- 1 pound ground turkey
- 1 cup onion small diced
- 1 large bell pepper small diced
- 3 cloves garlic minced
- 15oz. can black beans drained and rinsed
- 14.5 oz. can tomatoes petite diced
- 15 oz. can corn drained and rinsed
- 3 cups chicken stock
- 15 oz. can tomato sauce
- 2 teaspoons salt * See Notes
- To Taste pepper
- 1 ½ teaspoons garlic powder
- 1 tablespoon cumin
- 1 ½ teaspoons chili powder
- ½ teaspoon paprika
- 1 pinch chipotle powder
- ½ teaspoon onion powder
- ½ teaspoon dried oregano
- As Needed Toppings *See Notes
In a dutch oven (or large pot) over medium heat add in the olive oil. Add in the onions and peppers, sauté until soft.
Now add the turkey to the pot, cook for 5-6 minutes, crumbling the turkey as it browns. Once done add in the garlic and cook for 30 seconds.
Season with all of the seasonings. Stir until fully combined. Now add in the remaining ingredients.
Bring to a simmer and cook for 20 minutes.
Serve with your favorite toppings. Enjoy!
*If using low sodium or no salt added veggies/chicken stock, add the salt to taste.
