Ground Turkey Taco Soup

Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound ground turkey
  • 1 cup onion small diced
  • 1 large bell pepper small diced
  • 3 cloves garlic minced
  • 15oz. can black beans drained and rinsed
  • 14.5 oz. can tomatoes petite diced
  • 15 oz. can corn drained and rinsed
  • 3 cups chicken stock
  • 15 oz. can tomato sauce
  • 2 teaspoons salt * See Notes
  • To Taste pepper
  • 1 ½ teaspoons garlic powder
  • 1 tablespoon cumin
  • 1 ½ teaspoons chili powder
  • ½ teaspoon paprika
  • 1 pinch chipotle powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • As Needed Toppings *See Notes
I always use Kosher salt in my kitchen! If using table salt, start with half the amount and adjust to taste, as it is much "saltier" by volume.

Instructions
 

  • In a dutch oven (or large pot) over medium heat add in the olive oil.  Add in the onions and peppers, sauté until soft.  
  • Now add the turkey to the pot, cook for 5-6 minutes, crumbling the turkey as it browns.  Once done add in the garlic and cook for 30 seconds.
  • Season with all of the seasonings.  Stir until fully combined.  Now add in the remaining ingredients.  
  • Bring to a simmer and cook for 20 minutes.
  • Serve with your favorite toppings.  Enjoy!  

Notes

*If using low sodium or no salt added veggies/chicken stock, add the salt to taste.
