If you’re in search of a quick and simple method to cook chicken thighs, look no further! Roasting them in the oven is one of the simplest and tastiest methods. It yields incredibly crispy skin that’s absolutely delicious. Bonus, it doesn’t take much effort to achieve that perfect level of crispiness.
The key to achieving that crispy skin is ensuring that the skin is patted dry prior to seasoning the chicken thighs. This removal of excess moisture allows the skin to become crisp rather than soggy and unappealing.

- Chicken Thighs – This recipe uses bone in, skin on chicken thighs.
- Butter – Unsalted butter that has been softened.
- Seasonings/Spices/Herbs – This recipe uses a blend of salt, pepper, paprika, garlic powder, onion powder, fresh or dried thyme and fresh parsley. Any premade seasonings that are good on chicken will work here.
- Lemon – A little lemon zest for brightness and flavor!
This recipe comes together with just a few simple steps.
STEP 1
Set the chicken out on the counter 20-30 minutes before you are ready to cook it. Pat the chicken dry with paper towels.
STEP 2
Combine the softened butter, salt, pepper, paprika, garlic powder, onion powder, thyme and lemon juice.
STEP 3
Spread the butter mixture all over the chicken thighs, I like to use a pastry brush to do this, so that the butter doesn’t melt or stick to my hands. Then place them on a parchment paper lined baking sheet or rack. If using a rack, make sure to place a pan underneath the chicken to catch the drippings.
STEP 4
Place in the oven and roast for 35-40 minutes or until a thermometer reads an internal temperature of 165°F – 185°F. I personally prefer my bone-in chicken to be cooked to 185°F because I feel like the texture is better. The USDA does state that bone-in chicken can be cooked to 165°F and be safe to consume.
Step 5
Garnish with fresh parsley if desired. Enjoy!
